profile iconThis is a 2016, 8 year old raw sake 😳. I think this might be the first time I've ever seen a raw ripe one that's this old? In terms of brewing year, would it be 2015BY? The color is relatively beautiful without feeling the passage of 8 years. When you drink it, the sense of maturity is almost imperceptible, and it has a gentle sweetness and umami, as if the corners have been removed. I don't know what the original was like, but I think it's really good, don't you? This may be the best Ichinokura I've ever had! I drank another sake from a certain Hyogo prefecture 25 years ago, but was told not to post it😅. So I'll just introduce it briefly in text 😌. It was kept in the fridge, so the aroma was matured, but there was almost no color on it. When I drank it, it had a strong sense of maturity, but it wasn't unpleasant. I'd love to hear what other aged sake lovers think of the 25 year old one 🤔.

It seems that this sake brewery has a long history as a wholesaler to the Date family. There was also Katsuyama no Dawn, but it was too expensive and I gave up on it.
