My first Hakurakusei!
I've often said it's the ultimate food wine, and of course I had high expectations, but it was even better than I expected!

The first Kawayuka dinner of the year was an omakase kaiseki at Rokko. The sake to be served was Urakasumi Junmai Dry. A good sake that never misses.
We served it with an assortment of hamo (conger eel) sashimi.

This is a 2016, 8 year old raw sake 😳.

The color is relatively beautiful without feeling the passage of 8 years.
When you drink it, the sense of maturity is almost imperceptible, and it has a gentle sweetness and umami, as if the corners have been removed. I don't know what the original was like, but I think it's really good, don't you?

I drank another sake from a certain Hyogo prefecture 25 years ago, but was told not to post it😅.
So I'll just introduce it briefly in text 😌.
It was kept in the fridge, so the aroma was matured, but there was almost no color on it. When I drank it, it had a strong sense of maturity, but it wasn't unpleasant.
I'd love to hear what other aged sake lovers think of the 25 year old one 🤔.

This is also a summer sake. It was hot and warm during the day, so it was nice to have a refreshing summer sake.

It was hot today 🥵🫠I heard it will be even worse tomorrow 🫠This time I combined this with cooked fava beans, which are in season now 💁.
I think the standing aroma is some sweetness and alcohol.
When you put it in your mouth, the acidity and umami spread in your mouth and at the end, you may feel a hint of rice sweetness.
Serve with cooked fava beans (🫘). The combination of the flavor of the fava beans and this sake makes the taste even deeper. It's a taste that sinks in. ☺️
