From the label—One of a series of sakes for comparing different tastings, brewed under the same conditions except for taste (yeast and rice polishing ratio. As said in the name uses Momota rice polished to 70%. Momota is a new sake rice variety developed by Akita Prefecture, that began full-scale distribution in 2021.
Momota has won numerous excellent results at the Akita Prefecture Sake Competition.
For all that pretty good but a sharp taste & not much complexity.
