Purchased when Yoohee and I went to Mystery Chi-Ya on the last day of our Bon vacation. It has a soft and complex flavor with acidity and sweetness as well. I thought it would be sweeter because it said juicy or something like that 😅. It's sweet, but if you ask me if it's juicy 🤔. It has a very strong rice taste, but the rice taste might be juicy. It's the first sakura I've ever tasted, and I kinda feel like it could be heated up 🍶.

Thanks to the mysterious cheese shop, I can drink many kinds of abe, but I had never had a basic junmai at home, so I bought it 💡. I remember that Luteltemi brought some to share at last year's offline meeting and it was delicious, so I'm sure I can't go wrong ✨. I opened the bottle vigorously 🍾. Sweet melon 🍈. Dairy and Yeast June Corner Report 2📝. I was still curious and drank it, Golden Chun Chun 🐤. The sweetness like Wasanbon and the good bitterness came and flowed smoothly. You can't go wrong with Golden Sparrow, no matter which one you drink👍.

Dairy and Yeast June Corner Report 1📝. I wonder if the specs for this one will be a Hashira shochu-brewed Kijoshu. It has a tart apricot-like sweetness and a sourness at the end. There was no alcohol smell of shochu, and the acidity gave it a nice sharpness. Personally, I quite liked the taste✨.

Corner at Mystery Chi Restaurant, Summer 2024 (iii) I had a hard time deciding on the last one, but I went with Vega. The one I had in the past was a draft sake, but this one seems to be fire-brewed! It tasted like akada with a touch of gas and a touch of sweetness. Personally, I prefer VEGA by far 😋.

Corner at Mystery Chi Restaurant, Summer 2024①. Last day of Bon vacation😭 Sumi no Sake Shop will be closed for a month for renovation starting tomorrow 🚃 so I decided to go there after a long time. We met up with Mr. Yoohee at Kobe station and took a bus to Sumino Sake-ten 🚌. We had been visiting liquor stores together the day before yesterday too 🤣. The fridge was empty before the remodeling, so it was mainly sake from the hanpukai (a Japanese sake distributor's association) and point exchange 💦. Yoohee-san kindly allowed us to use our points to buy some valuable sake 🙏. Thank you very much 🙇🙇. Then we moved to Takatori and went to Mystery Cheese Shop. I am a first time visitor to Katori 😁, another brand of five girls with a strong image of Saketoran. The brewing year is 2022, so it looks like it's been sitting for about 2 years. Alcohol 21 degrees 😳 It's gutsy, like an alcohol-sweetened sake. Complex taste but also sweet. Very drinkable type. If you don't have strong flavored food, you'll lose to the alcohol💦. The 3rd and 4th pictures are quiche and white mold salami. The white mold salami (is that the right name?) is addictive and extremely tasty 😋.

It is as sparkling as a sparkling wine. It has a cloudy white color, a delicious rice flavor, and a slightly bitter taste with a refreshing sweetness. After getting the pink one, I bought the green one because it was also on sale. We were able to compare the two at the same time👍. The base of the aroma is the same as the pink, but the pink is more fruity and the green is more carbonated and refreshing 💡. 720 mL ¥ 2,420

It has a schwashy, faintly citrusy aroma that flows smoothly with a slight bitterness. There is also a gentle pineapple sensation. bouken - Nemuchi and I went to a mysterious cheese shop to get this 🚈. Pink is the Dantotsu favorite among Abeno's seasonal sake. Every year it sells out so fast that I never had a chance to buy it, and this year I was lucky enough to buy it with my brothers 💡. It was juicy and fruity, just like the rumors say, and it was gone in a gulp 💧. 720 mL ¥ 2,420

Dairy and Yeast May Corner Report: 2️⃣ Next is Amber Izumi, another brand of Izumi Shuzo, famous for Senzuke. I was told about it by bouken before but never had a chance to drink it, so I was able to drink it here 💡. It says that it is made from 100% Hyogo rice, but I could not find out the variety 💧. It has a gentle sweetness, but flows smoothly without any peculiarities💨. It's a bit of a "orikarami", but I don't think the flavor of the rice is that strong.

Hi Yoohee, I'm sorry to hear that. I think that the Amber Spring is basically made with Gohyakumangoku, and this product is made with Gohyakumangoku and rice 🤔.

Dairy and Yeast May Corner Report: 1️⃣ Last day of GW, nothing much to do, so I decided to check out a mysterious cheese shop 👀. I had never had the REGULUS from the Star Series, so I decided to try it anyway 💡. It was a little schwarzy, smelled like white grapes and flowed smoothly. It was like a white wine as rumored, and the bottle is stylish, so I recommend it even for those who don't like sake👍. I also had a glass of Abeno Green afterwards and it was so good that I bought a bottle. I will report later 📝.

The umami of the rice can be felt well, and the bitterness and acidity come and go at the same time. There was also a standard junmai sake on tap, so I compared it with Biseong ✨. Is it fire-aged? We are finally in April🌸. The first one is raw golden chun chun 🐤. This year I was lucky enough to find a sale at a mystery cheese shop and was able to purchase👍 It flows with a melon-like aroma and sweetness, with a slight lactic acidity. Dairy and Yeast March Corner Report: 4️⃣ My brothers and I decided to drink it last because they said it was "a very rich tasting noble brew" 🍶. If this bottle was suddenly served to me, I would have mistaken it for wine 🌾🌾. They also serve sparkling sake in the summer 💡. The aroma of apple and sweetness is very strong 🍎. I thought this tasted absolutely delicious to drink with meat dishes 🍖. After 4 drinks, we called it a night. I left Nemuchi-san and went home quietly, except for bouken-san and a liquor store in Motomachi 🚈.

Dairy and Yeast March Corner Report: 3️⃣ I've been through the pure blue brand because it's always on the shelf, but I decided to take the opportunity to try it 💡. Expectations are high as they use Aizan from Kasai city ⤴️ The sweetness is felt in the mouth at first, but it soon recedes with a hint of sourness. The bitterness peculiar to Aizan is not felt too much, but it is not too sweet, and it can be drunk without peculiarity. After that, my brothers were drinking Junqing too👍.

Abeno Green Label. ☺️ The sake rice is Raku-fu-mai. It is a rare sake rice suitable for both sake and awamori 🌾. Misty nigori that fizzes so vigorously that it bubbles up when poured. The refreshing sweet and sour taste of unripe green melon and plum, with sweet aromas of banana and vanilla bean, dairy notes like parmesan cheese, and bitter nuances of minerality. The gasiness is schwashy🫧. Light mouthfeel and dryness with minty freshness and a sense of escape. From the gentle sweetness of the rice and the firm umami, the mild acidity rises up and mixes with the gaseous sensation, while the mature bitterness supports it from the mid-palate onward. The gasiness and refreshingly bitter acidity pass through to the nose. A deep lingering bitterness lingers as if sinking in, and the after-flavor is bitter citrus with a hint of cheese in the aroma. As the temperature rises, the wine has a moderately intense sweetness, a clear flavor, a gentle acidity, and a minty freshness. This is... delicious ☺️ I like it 🥰. You can taste the fine bitterness and pleasant aroma as if hops were added 🍶. I had to finish it before I could try heating it up😊.

This is a comparison of two Sake from the mysterious cheese shop "Dairy and Yeast Factory" where I went to buy Sake. Next is the WHITE Sake 🍶. The label still makes me cry as usual 😅 The appearance is yellowish crystal. The aroma is less fruity than that of the GOLD Sake, and the acidity from the malted rice has a mild aroma with a slight increase in stimulation. It starts with the sweet umami taste of fresh rice, followed by the stimulation of acidity, but it is still gentle and soft. Many sakes made with white malted rice have a stimulating acidity, but Imi has a gentle, mild sweetness and umami, wrapped in an acidity that leaves a slight stimulation. From the mid-palate, the acidity becomes slightly more stimulating, supported by the umami, and comfortably slides down the throat to the back of the throat where it finishes. The impact of the acidity is weak, but the gentle stimulation is refreshing and good. When it is rolled around in the mouth and allowed to absorb air, the sweet and tasty flavors and acidity balance each other and create an indescribable harmony that is delicious. ☺️ It does not have that much white koji flavor, but it is delicious. The weather was bad and there were not many customers, so it was fun to talk with the owner while drinking sake. ☺️ I want to go back to this store because I can feel their love for sake, cheese and wine 🍶🧀🍷.

It has been a while since we visited Dairy and Yeast Factory, a cheese shop, Japanese liquor store and wine shop near JR Takatori Station in Hyogo Prefecture, to buy sake 🍶. (The map information on Sake-no-wa is the old name of the store.) Casually looking in the corner fridge, I noticed two bottles of sake 😳! I'm going to have to drink this one 😎. I'll start with the "GOLD Sagami" 🍶. The appearance is exactly like gold crystal. The aroma is clear and fruity with a gentle sweet koji aroma. As the temperature rises, the fruity aroma becomes more pronounced with a sense of richness like fresh melon or mango. There is also a beautiful rice aroma like rice after polishing. The texture is gentle, even thickening. Mild acidity with a sense of ripeness mixed with a sweetness reminiscent of extra-rich peaches and apricots. The sense that the acidity flows down the back of the throat as if it is escaping from a thick yet beautiful layer of umami. A rich sweet umami flavor also appears when swallowing. The aftertaste is a lingering sourness. Wow, it is amazing! It is like a thick, mellow, luscious liquid that spreads through your body. You can tell that this sake was made with great care. I would love to drink it again in 4 years. Thank you very much for your hospitality 🍶.
