Polishing ratio 60% Gohyakumangoku/Akebono 14%, Sake degree +1
Acidity 1.4, 1210 yen
It is clear, light and dry, but also has a little sweetness and fruity taste. A beautiful sake.
I imagined it to be more classic, but it was a little different.
If you ask me if it's modern, I'd say it's more on the classic side.
I thought Oita has a high level of quality.
Someone said that the level of Oita's shochu culture may have been raised due to competition with shochu 🤔.
There are many breweries that have the same toji (master brewer) for both sake and shochu, so I personally thought that they are feeding back their skills and experience.
