I opened a bottle of Risshun Asashibori, which I had stocked up on, thinking 💦 I had to drink it before spring was over. It's a fresh sake and I finished it in no time this time. See you next year 😊.

Spring Limited Sake Koshi Sake that is full of spring-like gorgeousness. Delicious with a gaseous taste. Cherry blossoms at Meguro River were in full bloom Unfortunately, the weather was not so good 🌸

Organic Natur 2023 ⭐️⭐️⭐️⭐️ Nama yeast, natural yeast, wooden vat brewing Domaine Sakura Kame-no-o Polishing ratio 90%, ALC 14% (undiluted) Super-ancient method, no additive yeast (brewer's yeast), wooden vat brewing, natural yeast, sake yeast, unpasteurized sake I found a sake shop in Chigasaki where I could buy Senkyoku, so I immediately looked for the label posted on Sakenawa and bought it. I was thrilled and excited to open the bottle to see what the 90% polished rice ratio would taste like. The aroma was slightly fruity...why 90%? When I put it in my mouth, there was a tingling sensation peculiar to nama-shu on my tongue, but since it has a low alcohol content of 14%, it seemed to quickly disappear like water after I let it warm in my mouth for a while. Still, the lingering taste in the mouth made me feel somewhat dry, perhaps because of the acidity. Chigasaki Aoki Shoten: 20230304 purchased and opened

Special Junmai Sake 3.11 Baton for the Future 100% Kuranohana, 60% polished rice ALC 17% Donation to the Hatachi Fund This sake was recently purchased at Aoki Shoten in Chigasaki, where we purchased Tenju, Koshi, and Senkou from the Risshun Asa Shibori Junmai Ginjo-Nama Sake event held by the Nippon Meimon Sake Kai. The brewer of Ichinokura launched the "Baton for the Future: Saving Children through Brewing and Fermentation Project" in December 2011 in order to pass on the support given to the brewery in the aftermath of the Great East Japan Earthquake to the children affected by the disaster in the form of a "thank you" gift. Since then, they have been selling the "3.11 Baton for the Future" and donating all proceeds from the sales to the Hatachi Fund, a support fund for children affected by the disaster. I bought a bottle thinking that it was a small support that even an old man who drinks can do. I first enjoyed it at room temperature (cold sake). It was slightly sweet to slightly dry. This is the first brand I have had as a recommendation from the liquor store. It has a bubbly taste, and as the temperature rises, it has an alcoholic taste. It has a bitter taste, so it is refreshing but not light. It is sharp and has little sweetness.

Still have one bottle in stock 😆 Holder I wondered how many years it has been since I started drinking this... so I went back to the analog record before Sake no Wa... R1BY, 60% rice polishing ratio. It was different from now! R2BY What a 5 bottles I drank lol R3BY: Polishing ratio 65% from here on. I drank 4 bottles in total. R4BY Maybe I will drink 4 bottles.

Kinoene Junmai Ginjo-shu Tachiharu Asa Shibori Nama-zake Polishing ratio 58%, ALC 16%. Of the three types we received today, this sake has the strongest carbonation of the raw sake and is the driest. It has a stimulating effect on the tongue, and the aroma that spreads in the mouth is fruity. The Tenju we had today has already been checked in on February 4, so I added only the image of the Risshun morning pressing to the fourth picture. Risshun Asa Shibori Junmai Ginjo Nama Genjyo ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 14%. 20250207The Aoki Shoten purchase was a Junmai Ginjo with a raw yeast base. Enya-san informed us that three types of Risshun Asa Shibori (Senkou, Kouji, and Tenju) are in stock. Tomorrow is forecasted to be snowy in Kanagawa Prefecture, and I have another get-together, so they may be gone before I can stop by...(^◇^;)💦. I took a chance and stopped by. 😋 Slightly sweet, with a tangy raw sake stimulation on the tongue, this sake has a unique aroma and flavor unique to Sengoku on the palate. Since this is my first encounter with Kouji's Risshun Asashibori, I will check in anew, but Tenju's Risshun Asashibori has already been checked in on 2/4/2023, so I have updated the date of drinking to 2/9. Junmai Ginjo Nama Genjyo Nama Shu Tachiharu Asa Shibori ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 15%. 20230209 We received Risshun Asashibori from Enya for Senkou, Tenju, and Kouji. 2023/2/4 Risshun We attended the Tenju Risshun Morning Squeeze Festival, which we reserved in advance at Matsudaya in Fujisawa City. The store's president went to Akita the day before to the brewery Tenju Shuzo and brought back the Junmai Ginjo Nama Genjozo pressed early in the morning on 2/4, Risshun, with the brewer to serve at the store. This junmai ginjo nama sake was the first junmai ginjo nama sake pressed in the morning of Risshun that could be tasted anywhere outside of Akita Prefecture. The sake, which was brought in cold and ready to drink, was fresh and crisp, with a slight carbonation on the tongue and sweetness in the mouth, but as it warmed up a bit in the mouth, it tasted a bit dry. Sentori, which we purchased at the end of the year and have not been able to drink. This is the first snowball of the season. Slightly sparkling, low-alcoholic, refreshing, with a slight bitterness in the aftertaste. It is my favorite standard muddy sake.

New year bottle this year 😆 I checked and it was 5 years old. The first thing you feel is the acidity. The taste is clear with little alcohol. The taste is mild, mainly apricot sweetness, and seems to be well received by women.

Accompanied by dinner on the second day of the New Year. Slightly fizzy. It has been a while since I have enjoyed the taste of this Hachitan-Nishiki. I often drink Hachitan-nishiki by Kamurai, but this is the first time for me to drink Hachitan-nishiki by Kamo Kanehide.
