I have never been to Hiroshima. I have only a good impression of it though. It was thanks to Tomikyucho that I fell in love with sake. Hiroshima is the twin of Nagano and Hiroshima as a potential destination for my family. Was it Aristotle who said that the land has power? I understand what you mean when you say that we should stop using the expression "dry" or "sweet". The criteria are vague, and just as there is summer in spring, there is sweetness in dryness. But this sake is great. Anyone who drinks it can tell it is dry.

Finally, a weekend. Last week was Kure, this week is Kaygetsu. Sake from Kochi two weeks in a row. The owner of a local sake shop in my neighborhood says, "Kure is from the southern part of Kochi. Kure is from the southern part of Kochi. It goes well with fish. Kaygetsu is from the northern part of Kochi and goes well with meat. I wanted to check it out, so I went to Kaygetsu. When I returned home, I found that, unexpectedly, my family was cooking meat. I see that this sake is more like beer. It goes great with meat. My wife's belly is plump as she is expecting our second child. Sake named after the moon is also good luck.

It is the kind of sake that tastes good no matter who drinks it. The reason why it is so plain is probably due to the cover and the kanji characters. I remember a scholar once told me that sobriety is a taste that can only be produced when one is grounded. What's good about it is that it's all good. But it's not about winning. That kind of goodness.

Children's Day. My son and I went to the iris bath again this year. I wrapped an evil spirit around his cute forehead. After taking a bath, the pleasant breeze made me want to geta (wooden clogs), so I went to my favorite local sake store to walk instead of ride my bicycle. I hesitated to buy a bottle of Hokkaido's Sanzen Sakura, but when I closed the shutters, I thought that the evening calm would turn to humidity, and I wanted a sparkling sensation. But when I returned home and opened the refrigerator, I found a bottle of Yona Yona Ale. The first time I drank it was at inishmore, a famous Irish pub in Ebisu. That was about 20 years ago. I was careful not to show my inner regret to my wife, who had prepared the beer for me, that if there was beer available, I should have chosen the easy-to-drink refreshing Sanzen Sakura instead of the slightly sparkling Morishima. Then, what should I have for a side dish? I cut the expired deep-fried tofu in half, put a white onion in the pocket that was created, and grill it over low heat until crispy. Finally, a dash of soy sauce. Easy, inexpensive, and delicious. From the omochi window in the kitchen, I can see the green loquats in the temple across the street are turning yellow. Frankly, this Morishima was too sweet at this time of year. I would like to taste it again in early fall, when I would like to wear a coat.

My landlord gave me a pruned azalea. My wife arranges it at the entrance. This spring, starting with plum blossoms, mimosa, peach, and cherry blossoms, flowers have been enriching my heart. As one gets older, azaleas become even more beautiful. In other words, the life of flowers is not short. Tonight's sake was Miyamanishiki, a junmai ginjo from Sagaminada in Kanagawa Prefecture. The owner of my favorite local sake shop told me that in the past, Kanagawa sake used to be so bad that it was undrinkable, but this sake is different. I had been turned away from Kanagawa sake by Izumihashi, which I had never been able to get my head around, no matter how many times I drank it. The owner was right when he said that the sake had a delicious flavor. The sweet aroma is not bad, although I prefer the fragrance in the mouth rather than the aroma from the sake itself. Slightly effervescent. Hardness in a good sense, with a greenness like new sake. It is sweet at the entrance and even bitter at the exit, like the astringent peel of a late-ripening citrus fruit. A sake that shows many faces in a single sip.

I went to my favorite liquor store last night just before closing and found it closed. So I rode my bicycle at breakneck speed to a second (excuse the pun) liquor store for some spring deer. The sake was thick and smooth, as it was a raw, unadulterated, unadulterated sake. I paired it with some grilled salmon I had bought two days earlier at a fish shop I patronize in the shopping street I pass on my way home from work. The best coupling. It becomes sushi in your mouth.

I am a stoic who only drinks on Fridays and Saturdays because it interferes with my work. And I break that rule easily. But this week, I'm going to follow the rule to the letter and have an after five on Friday. My son wants to go to a bottle store, so I take him to my favorite sake store. The jacket is modest, like an ink painting. The Japanese nightingale in this garden is very dull. My son pointed to the wine and begged for a glass of grape juice. The owner of the store takes the liberty of handing me a rice cracker. With a 14% alcohol content, I thought it would be a light sake, but it was heavy and dry. As I have a sweet tongue, I was a little disappointed, as I had been planning to take away the week's fatigue with a sweet drink. The brewer may cry, but this bird flew highest when paired with a thick slice of potato chips.

Unfortunately, it rained. It's been a few years since I've somehow come to understand what barometric pressure does to the mind. Regardless of that, this evening I had Hanatomoe, a famous sake from Nara. Is the product name "hanatomoe new nama-zake" on the back? It says, "Since 2017, we have been making all of our sake without yeast." The owner of my favorite liquor store told me that the acidity was rather like that of a lemon, and that alone gave me a refreshing feeling, so I bought it immediately. The first sip gave me a light sensation on the palate that was different from that of Hanaboe, which is made from mizu-hashiroshi (water-brewed yeast). It is perfect for this time of year, which includes a slight hint of the rainy season in spring. After drinking sake, I usually feel tired of washing the plate of side dishes, but this light sake doesn't let me do so. For a while, washing the dishes had hardened inside me and become a meaningless activity, but today's sake made washing the dishes pleasant. I feel lighthearted that such a low-pressure day is possible. I had shied away from sake with low alcohol content, but I relearn the self-evident truth that I should use the right sake at the right time and the right place.

 This week is a special week. My wife is returning home with my son.  The refrigerator at our favorite bar is a treasure trove of excellent sake.  We enjoyed Aizu Chusho, Shinomine, Amego no Tsuki (moon after rain), etc., but drinking sake outside is not suitable for recording.  It is a waste of time to put it into words. I am always too tired to try to capture the taste in words, but I would rather be numb with bliss.  On the other hand, I would like to leave the sake I drink at home in words. This is because I spend the night with a bottle of sake.  Sanjoraku from Toyama, Gokayama-brewed Junmai Nama-nama sake. Purchased at a reliable local liquor store.  I think this is a masterpiece.  It is fruity and refreshing, and the bubbles serve to cut through the sweetness without leaving any sweetness on the palate. So even if you drink it in a leisurely manner, you will never get tired of it.  I am out of entrée.  I open the fridge to find already-opened bamboo shoots. Unusually, there are about six of them left.  My wife, you're doing a good job of leaving them behind in this way.

Returned to wife's parents' house. It rains for the first time in a while. This is also spring-like. Yesterday, we saw a Japanese bush warbler practicing its song in our yard. We rent out our house, but we are lucky to have a plum tree in the garden. My father-in-law is looking at his grandson, and I am looking at the sake in the fridge. Not the famous sake from Kyushu, "Uguisu in the garden," but Akita's "Yukino Kayasha," which is also designed to be a beautiful sake. Since I'm back to sweet sake, I'm happy with the sweetness of Akita's sake. Iburi gakko with cream cheese. If you think they would go well together because they are also from Akita, you are mistaken. Just as a close-up is blurred, too close is not a good pattern. Tonight, the first prize goes to the daikon radish dipped in red sweet vinegar. In the end, only it and a bottle of sake remain. On the dining table, it looks like a Japanese plum and a Japanese nightingale.

The Osawa Brewery of Meikyojo-jo-sui has previously served Shimoteigo with a famous brand of sake called Seiki. The first sip, which I will never encounter again, has a mild sweetness with umami and a spiciness left behind by the slight fizz. I tried to act like an expert, saying that it does a good job. My wife offered me a Chibi Maruko-chan soy sauce jug, saying, "I only have one. Sitting on it were large strawberries, the last remnants of the season. They are a perfect match. The unexpected appearance of a noble snack brought to light the essence of this sake.
