It was getting cold, so I warmed it up and had a glass of sake. When chilled, the sweetness and umami are assertive, but when heated, the roundness comes through, But when heated, it has a more rounded flavor. Warmed, it has a rounder, rounder taste and is fuller and gentler. Great with nabe. Delicious. The mouthfeel is as if it melts into the warm soup. The lingering taste that goes down your throat.
