I haven't had Urakasumi in a while. I am glad. I don't remember it being this fruity. It is very tasty. After the easy-drinking fruity aroma, it is a dry sake with a clean aftertaste and the umami of rice that is typical of Urakasumi. As it gradually returns to room temperature after pouring, the robust flavor becomes stronger and more enjoyable.

This is a sake by Raifuku that I dare not reveal the details of. It has a firm umami taste followed by acidity, and is it more on the dry side? It has a lingering aftertaste. It is true that it tastes great on the rocks or with carbonated water! I've been drinking it cold, but I'm looking forward to seeing how the atmosphere will change when it is heated up. It went well with rum raisin butter cake.

Summer is for nigori sake! I had a hard time opening the bottle of nigori sake. It is very fruity and easy to drink! The balance of rice flavor, acidity, and sweet richness makes it easy to drink. The shuwa shuwa makes it even easier to drink. I have never tasted nigori sake this good before. I was happily surprised. I had it with smoked egg, but it would be good with a more robust flavored dish. I would like to make a meal with this sake.

This is the third bottle of Kinunomine. Along with its dry aspect, the mild umami of the rice is well asserted. The acidity is also well-balanced, making it more enjoyable with a meal than as a stand-alone sake. This time we enjoyed it with scallops and red clam sashimi, and we were able to reaffirm that Shimane sake is indeed delicious!

This is a sake from Shimane, Japan that I decided to purchase after seeing it on Twitter. I started with Kinuchan Blue Light, a summer sake. The dry sake is very tasty when cooled down to a crisp! The balance of umami and acidity was just right, and it went well with Japanese sweets.

Summer! Delicious sake. I happened to be able to buy a bottle of Sengoku's Kabutomushi. It is clear, crisp, and full of acidity and flavor.
