I received this as a gift from a colleague.
It is a sake commemorating the 150th anniversary of the establishment of Miyagi Prefecture.
It was very refreshing, but with a great umami flavor 😊.
This sake was produced as a project of the Shirakawa Good Sake Association and is sold only in the Shirakawa and Nishigo areas.
It is brewed with locally grown rice by a local toji (belonging to the Yamatogawa Sake Brewery in Kitakata).
We had it well chilled and found it to be crisp and dry, easy to pair with any dish, and not overpowered by strong-flavored dishes.

This sake was made with a yeast that traveled through space.
The aroma was fresh, with a firm umami flavor and a sweet and sour taste.

I purchased this sake at the end of last year, which is made from 100% Aizu-grown Toyonishiki. The sweetness is moderate, but the umami (flavor) is well expressed, and it is very drinkable 😋.
