I felt that this is the middle of the road for Kuheiji. It has a refined mouthfeel and a lingering impression of heaviness. The sweetness, acidity, richness, and bitterness are all moderately balanced. With the preconceived notion that it was made from 35% Yamadanishiki from Hyogo Prefecture, I was impressed with the finish. It was a good start to the New Year.
