On the first day after opening, there is a bitterness, which is typical of a fresh sake.
It has a beautiful impression like a daiginjo, but it has a dry atmosphere.
Two days after opening the bottle, the impression changed considerably.
It is now sweet and sour, much to my liking.
The bitterness and cleanliness did not change, so I thought that was the characteristic of this sake.
In general, I don't like it that much, but my impression is that it is a carefully made sake.
