It's light, with gentle acidity and a gentle sweetness, with a slight bitterness. It dances in your mouth with a swoosh at the end. I thought it was the most elegant of all the Abes I drank this year. I wonder if this is partly because the rice polishing ratio has been increased by 5% since the original plan? The label says it's a food sake, but it's so delicate that it's great with simple dishes, but it's also great with sweets. 😋
