Miyakanbai Junmai Ginjo AUTUMN TIME This is one of our favorite seasonal sake from the "time" series. The freshness of the mouthful spreads out in a gorgeous manner, as if to say, "This is Miyakanme. The taste is skillfully composed with a smooth transition from the freshness of the mouthfeel to the calm flavor of the autumn sake and finally to the gentle aftertaste. The skill of the brewer is to make the most of the rice flavor while keeping a certain sharpness throughout. As usual, the sake brewing is too skillful. I love it so much that I want to count the fact that it is so good that it will soon be gone as a drawback.

DATE SEVEN, an annual collaboration of seven Miyagi sake breweries, is led by two breweries, this year Katsuyama and Suminoe. This is Katsuyama's creation. Every year the stylish label is designed for the Tanabata festival, and it is not only beautiful, but the Sendai Tanabata decoration and the mountain in the background is Izumigatake, which is very pleasing to the locals. I have always believed that Katsuyama's sake is never out of place, and when such a brewery is the leader, you can be sure that the sake will be delicious. Katsuyama's usual sweetness is the first thing that comes to my mind, but this time, the flamboyance of the mouthfeel is much more restrained. On the other hand, the elegant umami flavor is as usual or longer, spreading slowly and lingering on the tongue. If the usual Katsuyama flavor is a shooting star, this is like the Milky Way. The light is not dazzling, but it is always there. You can enjoy the slowly seeping flavor, but it is not cloying, and it is Katsuyama's skill and the strength of the other six breweries that have created such a high degree of perfection in this cup. It is a perfect match for Katsuyama's skill and the strength of the other six breweries. It is a sake that makes you want to drink it all the time, and it is truly regrettable that you can only find it once a year in a four-pack.

DATÉ SEVEN SEASON2 episode3: Suminoe style DATE SEVEN is an annual collaboration of seven Miyagi sake breweries, led by two breweries, Katsuyama and Suminoe. This one is by Suminoe. The stylish label is designed for the Tanabata Festival, and the Sendai Tanabata decoration, the San Juan Bautista, and the sea depicted on the label are all local designers' favorites. The taste is nothing to speak of. The sharpness and sharply penetrating flavor of Suminoe is preserved, while the complex flavors created by the remaining six breweries shift rapidly, overwhelming you from the first sip to the aftertaste. Each of the six remaining breweries has its own unique flavor, and no matter how much you drink, you will never get tired of it. It is also fun to drink it without thinking too much about it, thinking about how it tastes like this brewery! It is also fun to drink while thinking about such things as, "This flavor is just like this brewery! It is a shame that we only get to see this sake once a year, but it is also a reason to live to see it again next year. I am sincerely grateful to have had the chance to meet him.

Junmai Ginjo Hitotsubatsu no Koi The season of Natsukoi has come again this year! This is a summer sake from the Shinzawa Brewery! It tastes a bit sweeter and cooler than usual. Junmai Ginjo Sake Mirai My favorite sake with my favorite name. I love it so much that I can no longer evaluate it with an impartial eye; it is a sake that I wish would flow through my body instead of my blood. It is more poised than flamboyant, yet has a very smooth texture and a dense flavor that invites you to heaven. It is neither too strong nor too weak, but has the perfect balance, and the umami aftertaste that lingers on the tongue keeps it from going back to the earth. God created the world in six days and rested on the seventh day after drinking Ippaku Suisei.

Junmai Daiginjo Atago no Sakura A rare sake in a PET bottle. It is probably a spring-only sake, limited to PET bottles. The fact that it is bottled in a PET bottle does not affect the quality at all, and one can clearly sense the efforts of the company. As the label suggests, the flavor is gorgeous, but the light color reminds one of cherry blossoms waving in the wind. The Junmai Daiginjo flavor and fragrance are skillfully restrained from becoming too strong, and the clean, clear finish is refreshing. This is exactly what the Shinzawa Brewery's Spring Edition feels like. Try it while the memory of cherry blossoms is still fresh in your mind.

Junmai Ginjo It is hard to tell from the picture, but this sake comes in a plastic bottle. It looks suspiciously like a bottle of sake, but I was tempted to pick it up because it was made by the Shinzawa Brewery, which is a cash cow. The PET bottle is coated to resist deterioration of the contents, and the four-pack capacity shows their dedication. The flavor is light and clean with little assertiveness, leaving behind a sweetness and umami that disappears softly, making it a perfect food sake that goes well with just about anything. In short, it is just like the usual Junmai Ginjo from the Shinzawa Brewery, which is why I was surprised that the quality of the sake was not affected even in PET bottles. Light! Easy to open and close the stopper! It won't break even if you bump it! Above all, it is a container that makes a lazy person like me, whose room is covered with sake bottles whenever I'm not careful, very happy. It seems to have been on the market for several years and has been re-released several times, but this is the first time I've seen it. I hope it will spread more widely.

Junmai Daiginjo Akita Sake Komachi The most delicious liquid in the history of mankind, Isshaku Suisei. This time, it is made with Akita Sake Komachi, the sake rice from Akita, the brewer's hometown. Junmai Daiginjo Akita Sake Komachi Every time you drink this sake, all you can say is "yummy". What happens when you drink a sake brewed with rice produced in Akita? It is. Junmai Ginjo Nama Shu Kouka I usually don't drink Hokuriku sake, but since it was a special occasion, I decided to give it a try. I had an image of Hokuriku sake as dry and refreshing, but this was a very different flavor. The freshness of the sake, the sweetness and umami in the front, but the flavor does not spread too much, and the aftertaste is like fireworks as it disappears. I would like to try more sake from Kaga and Noto.

Special Junmai Nama-nazake This seasonal sake from Suitoki is always stylish with its direct printing on the bottle. It is decorated with snow crystals and can be enjoyed while thinking of the faraway winter of Kesennuma. The taste is soft, as is typical of nama-shu. It has a full body with a core of sweetness from the rice, and wears an atmosphere slightly different from that of usual Mizutoki, but the aftertaste is that feeling of umami that runs through with a crispness. R04BY 2022 CRAFT series Rice and Hops 02 I picked this up out of curiosity because it was clearly different from the others. Hops are listed as an ingredient. The rice polishing ratio is 90%. The aroma is like beer. When poured into a sake cup, it has a cloudy light purple color. What is this? The taste is also difficult to understand. It has a fresh and fruity sweetness like nigori sake and the deliciousness of rice as its base, while the bitterness of hops tightens the whole flavor and brings it all together sharply. Despite all this, the overall cohesiveness is beautiful, with a high degree of perfection that allows the taste to flow as a single continuous stream without being scattered around. The hops do not make it a beer, but it is not confined to the framework of sake either. It is a taste that expands the world.

Junmai Daiginjo Tankoba-kumi-Unfiltered I was familiar with this brand, but I picked it up because I saw it in a guise I don't often see. It has the usual Otter taste with a slight effervescence, as is typical of nama-zake. The taste is youthful and fresh, reminiscent of fruit. Miyakanbai Junmai Daiginjo There are some sakes in the world that you can finish four gou of in one night, and this Miyakanbai is one of them. It is my favorite brand of sake from my hometown in Miyagi Prefecture, and it is always delicious. It always tastes good. It tastes like it makes your soul happy. Once you put it in your mouth, its fresh sweetness and gorgeous flavor bloom. The aftertaste, which is neither strong nor cloying, is as satisfying as after eating an elegant Japanese confectionary. Special Junmai A-Un This sake is a collaboration with Abe-kan, a brewery also located in Shiogama, Miyagi Prefecture. Miyakanume. It is a sake that is so familiar to the body that it is the number one liquid I would like to have intravenously injected instead of saline solution if I could not get it. Among Miyagi sake, it has the best balance of sweetness and umami.
