DATE SEVEN, an annual collaboration of seven Miyagi sake breweries, is led by two breweries, this year Katsuyama and Suminoe. This is Katsuyama's creation. Every year the stylish label is designed for the Tanabata festival, and it is not only beautiful, but the Sendai Tanabata decoration and the mountain in the background is Izumigatake, which is very pleasing to the locals. I have always believed that Katsuyama's sake is never out of place, and when such a brewery is the leader, you can be sure that the sake will be delicious. Katsuyama's usual sweetness is the first thing that comes to my mind, but this time, the flamboyance of the mouthfeel is much more restrained. On the other hand, the elegant umami flavor is as usual or longer, spreading slowly and lingering on the tongue. If the usual Katsuyama flavor is a shooting star, this is like the Milky Way. The light is not dazzling, but it is always there. You can enjoy the slowly seeping flavor, but it is not cloying, and it is Katsuyama's skill and the strength of the other six breweries that have created such a high degree of perfection in this cup.
