Junmai Ginjo Summer Sake with Goldfish Label At first glance, the label is pure white with only the name of the sake. However, if you turn the bottle around and look through the back, you will see a school of goldfish swimming in the sake. What a stylish presentation. I came across this sake when I was just starting out in the world of sake, and that was the end of my luck. Every summer, I buy a bottle to relive the excitement I felt when I looked at the label from the back. The taste is also nothing to write home about, of course. It is sharp and slightly dry. The taste is cool and refreshing, just like a goldfish swaying in the cool air. It tastes as if the image of summer sake has been extracted directly from the bottle, and with each sip, memories of summer seem to flow directly from the taste buds into the brain. As usual, the brewery produces sake that is old-fashioned and honest rather than so-called modern, yet not outdated.

Junmai Daiginjo Sanmai Hashi Read as "sanmai hashi". It is said to be a sake brewed by combining three different types of rice to produce eight different tastes. It is a delicious sake made by Miyakanbai, one of my favorite sake brewers in Miyagi Prefecture. It has a very elegant taste, which is due to the fact that it has been polished. It has a solid sweetness in its base, which keeps the overall flavor from being diffused. Naturally, the sweetness is not overpowering and does not detract from the elegance of Junmai Daiginjo, but the taste is deep and fragrant, and the aftertaste is full of the umami of the rice. The complexity and strangeness of the flavor is truly a masterpiece, just as the name "eight delicious flavors" suggests. Oh, our Miyakanbai. Praise be to Miyakanme.

Junmai Ginjo Betsujikomi Everyone who loves cats and sake is a good person! The Hagi no Tsuru cat label series is a no-brainer purchase, whether it's the jacket or the brand name. All of you instagrammers are welcome to try them. It is often sweet, but this time it is less sweet and slightly more sour. It is not as fragrant and has a mild aftertaste. However, if you taste it carefully, you will realize that it is like a precise glasswork, and that all the tastes are combined in a perfect balance without excesses or deficiencies to create this flavor. The charm of this sake, which is not flashy but can be enjoyed for as long as you like, may be similar to the sound of a wind chime, which is pleasantly yet surely echoing in the cool breeze.

SEASON II episode II Haginotsuru style This is a project in which seven breweries in Miyagi Prefecture collaborate once a year to brew sake. The leader brewery changes every year, and this year's production, the ninth year of the project, has a total of two bottles, with Yamawa Shuzo and Hagino Shuzo each serving as leader. This is Hagino Shuzo's version. The Yamawa Shuzo version was very tasty, but I usually drink Haginotsuru more than the Yamawa version. Therefore, we had higher expectations for this one. The taste was so good that it could not be better than this. Based on the usual Hagi no Tsuru, the flavor is extended in all directions, and yet the overall balance is perfect. It has a sweet and gorgeous aroma and mouthfeel. The body is full of freshness and richness. The outer frame has a hint of acidity and a pleasant umami aftertaste that spreads gently. The taste, which shifts from beginning to end with sweetness at its core, without becoming boring or clingy, scores 500 billion points out of a perfect score of 100. I could not help but smile at the taste, which was right in the middle of my tastes, not to mention the perfection of the sake itself. Can such a delicious liquid really exist? Is it not a dream? I am just grateful for the encounter.

The taste of this sake is so perfect that it easily surpasses such high expectations. It has a slightly refreshing aroma and a soft taste. While the mouthfeel is sharp, it is not what is called a sharp taste, but rather a flavor that is very important. It is followed by a refreshing bitterness and acidity reminiscent of citrus peel, and leaves a gentle aftertaste of umami with a hint of sweetness. While based on the usual Yamawa flavor, the taste has been extended in the direction of the gorgeous and rich umami that I like. It is a versatile sake that can be enjoyed with food or just with sake and water. I am deeply humbled by the efforts of the sake brewers in my hometown of Miyagi, and I am proud to be a member of my hometown, and I am happy to drink this sake again tonight.

Special Junmai Sake Matsubara-source This sake is made by the Kinai Shuzo brewery in Kurihara City, Miyagi Prefecture, and is brewed using hot spring water from Naruko Onsen, one of the three most famous hot springs in Oshu, also in Miyagi Prefecture. It has a mild sweetness and a slightly sour aftertaste. It is not flashy, but has a noble taste. The most notable feature of this sake is its smoothness. I am not sure if it is the effect of onsen water brewing, but it is different from ordinary water and has a soft and smooth texture that is enjoyable to the palate. This is a sake that you can savor at a leisurely pace, letting yourself feel as comfortable as if you were soaking in a hot spring. It is good.

Junmai Daiginjo Ginsei 40 Suminoe is a junmai daiginjo made with Gin-no-Iroha, a sake rice recently developed by Miyagi Prefecture. I won't bore you with the details, but Miyagi sake tastes very good when made with this rice. It is a beautiful harmony of the florality of Junmai Daiginjo and the full flavor of Gin-no-Iroha. Junmai Ginjo Hitonatsu no Koi This is a sake that appears every year at this time of the year, but every time I see it, I buy it and end up emptying a quart in a day, which is very annoying. It doesn't bother me. I wish they would sell it all year round. Maybe this feeling is love. Junmai Daiginjo Limited Nama Sake Jyunrei Junka Miyakanbai is my favorite sake in the universe. It was a stroke of luck that I found a liquor store in Tokyo that sold this sake, and I am sure that I will be going back to this store for a long time to get Miyakanbai. Treasure Ship Nani no Oto Junmai Ginjo Gin no Iroha Yuri is another brand of the same brewery, located in Yuriage, Miyagi Prefecture, famous for its red clams. Gin-no-Iroha is a recently developed sake rice produced in Miyagi, and it is a good match for Miyagi sake breweries, regardless of the details. I think it is a good match for Miyagi sake breweries. This sake is ranked first (according to my research) in the list of Miyagi Prefecture's best hidden sake. The attack is a bit rough, but the aftertaste is clean, leaving only a slight bitterness and sweetness without leaving a bad taste, and the way it washes away your taste buds is reminiscent of a wave, just like its name. The brewery is located in Yuriage. It is a perfect match for seafood, especially shellfish and sea squirts.

Junmai Ginjo Mild Nigori Nama Sake When you are about to buy a bottle of sake, you may have some doubts about what to do if it is not the right one, but if it is from a well-known brewery, there is no problem and you can throw it in the basket without thinking about it. Printed directly on the bottle, rather than on the label, are some very cute marine creatures. It seems to be based on the image of an aquarium, but there are no whales in an aquarium, right? It's fine, though. The flavor and aroma spread softly and then disappear as if melting, reminding one of light snow, and its quiet appearance gives the impression of wabi-sabi. The calmness of the flavor is indescribably appealing, as if it were suited for a mealtime drink, but it is also enjoyable on its own in order to confront its fading aftertaste. Yamakan This is the second collaboration with Katsuyama Shuzo, also a Miyagi brewery, following last year. The collaboration is a blend of the sake made at each brewery, rather than a separation of processes as in DATE SEVEN. Abekan, who brews a less flashy sake, but one that is honestly focused on the rice, and Katsuyama, who brews a fragrant, bright, and elegant sake. The sake produced by these two breweries, which have a certain symmetry, like a beauty and a beast, is still a masterpiece. The sake produced by the two breweries is a masterpiece. It has a fresh aroma, a sharp, broad, yet gorgeous edge, and a full flavor. The perfect harmony of the two is a highly finished product. Junmai Omachi Hagi no Tsuru from the same brewery is light and refreshing, while Hiwada's famous sake is like a sake that demands serious effort from the drinker. It has a strange taste with no core. Halloween-specific sake OZEYUKI seems to be releasing sake to coincide with any event. The label on the back of the bottle is full of hashtags. As the label says, it's pop, catchy, and tastes like a jolly good time. Sake! Water! Salt! It's not like "Sake! It tastes more like a carpaccio than sashimi. Watari-bune No. 2 Every time I drink Isshuikusuisei, I truly feel glad to have found sake. The most delicious liquid in this world.
