Purchased at a store in Akihabara. I was attracted by the name "sake that goes with meat". Warmed up to 40-45 degrees Celsius to drink it. If you drink it at a lower temperature, you'll get into the habit of drinking it. It's the best sake to go with meat so far. 90% polished rice and the flavor is amazing, but it's not too bad and easy to drink. I tried it warmed up. Taste: The sweetness, sourness, and umami of the rice were clearly evident, and there was almost no alcoholiness when it was warmed up. It has a clear sweetness, acidity, and umami, with almost no alcoholiness that comes out when it is warmed up. Color: pale light brown Crispness: good Bouquet: aroma of freshly cooked rice Scent: aroma of freshly cooked rice, mellow and gentle pear aroma Returning Scent: Mild and gentle scent of apples On combining with meat The warmth and rice flavor, the aroma, and the gradual sourness that is added to the flavor of the meat enhance the flavor of the meat. Despite its warmth, there is almost no aftertaste, and when I tried it with roast beef, it was so crisp that I wanted to drink it again and again. I think this is a unique feature of this sake. According to the label on the back, it goes well with beef tagliata, balsamic vinegar and parmesan cheese, grilled pork with miso paste, BBQ sauce and any BBQ sauce.

Yondone Akiokoshi Junmai Genshu. Nakamura Shuzo in Ishikawa Prefecture distributes this sake separately (to a store called Hofune) as a brand product. I thought the panda label was cute, and I was curious to buy it. Taste: mildly acidic, mildly sweet rice, slightly aromatic Color: light brown Crispness: good Bouquet: Fairly mildly sour Aroma: Fairly mild with a hint of rice Returning Scent: Good rice aroma It has a Junmai pure sake character and goes well with flavorful dishes. It goes well with grilled potatoes with a salty flavor. I'm glad I bought it, not only for the label, but also for the taste and aroma. According to the label on the back, it goes well with Jibu-ni, a Kanazawa dish.

At the Sukeroku side of Tokyo Station. It has a rising, hinting and returning aroma of rice and citrus fruits, which is mild and refreshing. The color is clear. It has a mild citrus sourness and sweetness. I feel they enhance each other when paired with sour delicacies and salads (combined with plum crystal). See photos for details.

At the Sukeroku side of Tokyo Station. Rising incense, hinting incense, and returning incense with a slightly sweet aroma of rice. It has a clear color. It tastes sweet and delicious, and has a mild sour finish. When it is combined with sour foods, the sweetness of the rice is more pronounced. This is a dish that can be safely promoted to those who are not fond of sake.

I bought this from a brewery that came to sell it at an event space in Tokyo Station Gransta. It's made from "Hanakomi" rice from Aomori Prefecture. It's a crisp, tasty, easy to drink sake with no bitterness. I want to buy it again. Color: light brown Taste: Rice flavor, mild sweetness, mild acidity Crispness: good Bouquet: gentle and refreshing Aroma: Gentle scent of citrus Returning Scent: Mellow scent of citrus fruit Dishes to be paired with: savory and sweet dishes. According to the official website, the dishes are beef tataki, sukiyaki, gobo kakiage (fried burdock root) and kitayori shellfish. I tried it with a salad of yuba, mushrooms, okra and balsamic vinegar sauce, and it was delicious!

I bought it at an Aomori products exhibition at Tokyo Station. It's a crisp, mildly acidic sake. Taste: crisp acidity, mild and subdued sweetness Color: light golden Crispness: good Incense: Fairly mild vanilla aroma Nose: Fairly mild with a pleasant citrus aroma Returning scent: gentle scent of citrus It has a lingering sour taste. I was surprised at the fact that the sourness is not what I expected from an unfiltered sake. Because of its sourness, it is very crispy when it is paired with heavy dishes. I think it goes well with Western food, dishes with sudachi (Japanese citrus fruit) and sashimi with lemon and soy sauce.

Purchased at the Sato Sake Shop at Tsuchiura Station. It is 80% organic rice milled. It is a characteristic sake with sweetness, bitterness and mellowness. It has a very aromatic woody aroma. It is easy to match with meals because it is crisp and clear. Taste: sweet, bitter, savory Color: Slightly brown Rising incense: almost none. Aroma: firm and woody Returned Scent: mild woody aroma Food to go with: I think it would be better if the original ingredients had a bitter taste. It was very good with celery in ajillo.

I bought it at Sato Sake Shop in Tsuchiura Station. I chose a dry one. Drinking temperature: room temperature (about a cool, dark place in summer) Taste: tight and lingering acidity, rice flavor Rising incense: Gentle rice Aromas: Gentle White Rice Returning scent: sweet like a gentle azalea Mouth: crisp. Dishes to pair with: well-seasoned or salty dishes When paired with the shrimp and potato ahijos, it was dry and well matched with the flavor, yet firmly sharp. It made me want to eat and drink it again. This is the kind of sake you want to eat and drink again.

Purchased at a liquor store in the station building. This product was released by the brewery on 1/18/2020 in a limited edition of 3,000 bottles (if you buy it, it came with one Tyrolean chocolate coffee nougat 💡). It should be noted that this product is a great marriage of chocolate and other sweets. It's an interesting sake that even people who don't like sake can enjoy like white wine. Taste: reminiscent of white wine, with a pleasant, mild acidity and a hint of sweetness on the palate. Color: light brown Aftermath: It feels like it's coming on slowly. Bouquet: fairly mild, with hints of grapes Aroma: Sweet and sour grapes Returning scent: sweet grape aroma Dishes to pair with: sweets with a hint of bitterness (coffee nougat, chocolatey cakes, etc.), and sweets with a hint of sour berries. Combining with coffee nougat It's reminiscent of a berry-infused chocolate cake, and it goes very well together. The sourness of the liquor crisps up the bitterness while complementing the sweetness, and I think it's a combination I'd love to have again! The sensation is similar to that of white wine. If you crack it open with water or ice, it might be easier for people who don't like sake to drink it.

Purchased at the Sato Sake Shop at Tsuchiura Station I was curious about the "mackerel" version, and I had just picked up some mackerel snacks from Fukuoka, so I gave it a try. Taste: A hint of alcohol and a slight rice flavor. A little sourness is also present. Color: Fairly light brown Provenance: Fairly mild rice aroma Aroma: Fairly mild and sweet with a hint of rice Aroma: Ordinary rice aroma, alcohol aroma Pairing: Mackerel (?) About combining with mackerel You can continue to feel the lingering flavor of the mackerel while eliminating the smell of the mackerel. However, if you eat the bitter part of the dish that makes the most of the ingredients, you'll continue to feel that too, so there's a The only thing I felt was that I had to be careful.
