Nine_aki
I bought it at an Aomori products exhibition at Tokyo Station.
It's a crisp, mildly acidic sake.
Taste: crisp acidity, mild and subdued sweetness
Color: light golden
Crispness: good
Incense: Fairly mild vanilla aroma
Nose: Fairly mild with a pleasant citrus aroma
Returning scent: gentle scent of citrus
It has a lingering sour taste.
I was surprised at the fact that the sourness is not what I expected from an unfiltered sake.
Because of its sourness, it is very crispy when it is paired with heavy dishes. I think it goes well with Western food, dishes with sudachi (Japanese citrus fruit) and sashimi with lemon and soy sauce.
