Junmai Daiginjo Nama Shu Alcoholic strength 16 100% Yamadanishiki produced in Aichi Prefecture Polishing rice 45 Sake degree -1 Acidity 1.2 Amino acidity 1.0 Yeast FIA 1 Ginjo aroma: gorgeous pineapple type? Sweet, sour and tangy. The aftertaste is a little refreshing.

Yamadanishiki, Gohyakumangoku 60 Al. 15 deg. Umami, complexity. The aroma is not great, but it is strong for a junmai sake. It has a strong umami, which is typical of Junmai sake, but it also has a sweetness and a bit of fruity flavor that I really like. It is a pity that the brewery is no longer producing it due to their policy.

Shiraoi: Sake that only brewers can drink LocalBreese2022/Sawada Shuzo Rich/sweet/firm/full-bodied with a hint of aroma. But it has a gaseous, fresh feeling and is easy to drink. It's like an introduction to the goodness of a robust flavor. The sweetness is quite strong at the end when the sake is close to room temperature, and it is very pretty.
