Visited for a preview of a party to be held here next week. We compared three kinds of sake, two of which were recommended by the restaurant. This is one of them. It is a sake from Shinshu, and this is the first time I have had it. The mouthfeel is gentle and the acidity gradually tightens. It has a nice aroma and is delicious. Here is a surprise. The president of this brewery was drinking next to me. The proprietress introduced us. She was on her way back to Shinshu, so I just said hello to her. She is a very down-to-earth and friendly person, and I was deeply moved to learn that this was her work.

To be honest, it's very hard to drink on the first day of opening the bottle 🤣.
It's kind of classic & kusekusekuse, I don't know what's balanced about it 🤣.
It was so subtle that I stopped drinking after half a bottle 😅.
However, on the third day..,
The sweetness has come out and the overall taste is mellow and easy to drink 😲 or rather, it's a complete change from the first day, it's definitely balanced and easy to drink 😆.
The taste has changed from a gutsy classic to a mellow classic, with almost no peculiarities 😊.
It's basically easier to drink when it's chilled as it has a slight peculiar taste when it's warm 👌
