Tosui is named after Sumio Wada, the master brewer.
Deeply delicious flavor spreads with light acidity.
Goes well with the light fat of yakitori
100% Yamada-Nishiki
Rice polishing ratio 59
Alcohol content: 16%.
Continue with the nama-shu. Easy to drink, but the acidity comes through, and the aroma and bitterness give it a kick. It is very good. I used to sit next to the president of Wadaryu at this restaurant. He often comes here when he comes to Tokyo. Since then, I have come to drink it often.
The second and third cups of Wadaryu followed. The first was the hiyaoroshi, the middle one. It is easy to drink, but the aftertaste is clean and sharp. This one is softer.

It has a refreshing aftertaste with an acidic flavor.
It seems simple at first, but you will never get tired of drinking it.
The store owner recommended that we drink this when we come to Ueda.
I drank it for the first time.
It is like drinking high quality water.
Good balance, a little citrus aroma, sweetness of rice.
I am very impressed 🙇.
Oh this is my favorite. Fear not, Ueda!
Good evening, Kosuke 😃.
Great Shinshu sake 🍶3 bottles 🤩Great start 🤗I've never had the sake from here but 🥲the restaurant's recommendation! Looks really good😙I'll make a note of it 😊.
Jay & Nobby.
Shinshu local sake is too good.
I am going to move to Toyama today.
I drink in Toyama, but I got hit in Nagano.
I think I will get hit in Toyama as well because I am taken by sake like water.
YOMOYAMA NAGANO in Osaka ⑧
Wada Ryu booth.
This is another sake that I have never had before.
Wada Ryu Tomizui Hitogokochi Junmai Shu, unfiltered raw sake.
Juicy acidity. Slightly sweet and spicy.
Wada Ryutonomizu Miyamanishiki Junmai-shu Unfiltered Nama-shu
Slightly acidic and mild.
Wada Ryutosui Yamae Nishiki Junmai-shu Unfiltered Nama-shu
This sake also has a slightly acidic taste and a slightly rich aftertaste, but I could not tell the difference between it and Miyamanishiki...
Wada Ryutonmizu Yamadanishiki Namaishiki Nama-shu
Kazuhiko Ota drank this sake on a BS program. I heard it is good when heated.
It has a deep umami and a strong acidity, and the flavor is the most balanced.
I forgot to take a picture of it 💦.
The brewer was very personable and polite.
Purchased at the warehouse when I visited Ueda City in May.
The president of the brewery was probably the one who explained it to me in detail.
Chose Yamae Nishiki from the Tomisui series with different rice, which was recommended to be ready to drink.
Muscat aroma and
Fresh acidity typical of nama-shu!
It is best to drink it chilled!
The astringency and herbaceousness in the aftertaste invites you to drink the next one.
There are six breweries in Ueda City, but rather than a rivalry, they respect each other and each try to bring out their own individuality....
I remember you telling me something like that.
