It is a junmai sake of the popular Wakanami. It has a strong sweetness and a full-bodied flavor. The finish is slightly bitter. It has a good balance of modern taste and classic taste.
Gorgeous & sweet, but easy to drink with a clean aftertaste! Sweet and fruity.
It seems to be easy to drink even for beginners, as it is made by a female brewer!
(It was easy for me, a woman, to drink too)
I paired it with bonito & ponzu, and it seems to go well with any dish. It is my favorite.

It has a fairly acidic taste, which is less pronounced than expected and just the right amount of sweetness.
When it glides on the tongue, it has a flavor and aroma that says, "Ah, it's water made from rice," which I find most appealing (I also like that about my favorite, Oroku).
(I also like that about Oroku, which is my favorite). There is a bitterness to the overall taste, and this tightens it up. I don't like bitterness, but there is also bitterness that has a positive effect.
It tastes good! Yes, it's good like this. No wonder it's so well received.

Jay & Nobby That's exactly right. If it were wine, they would all taste about the same. And it is cheaper than wine! Sake is the strongest alcohol in the world.
Really, this Honjozo is amazing. It is slightly carbonated and has just the right amount of richness and flavor. It is the best in terms of cost performance.
The Honjozo and the Shibarihizuru are in a showdown, or perhaps a collaboration, or perhaps a co-performance. The classic, light, dry, and extremely refined Shijikizuru, and the modern, umami, and explosive Wakanami. Although the vectors are different, we can feel the philosophy in both of them.
Well, it was a nice evening drink. Running in the evening, we were covered by rain and thunder.

This Honjozo is delicious 😻The Jungin and Junmai are both delicious but this one is just as good 😁I haven't tried the Shimehari Tsuru's so I had to check it out 🙏.
