Memorandum.
I was out in the heat and couldn't resist a beer 🍻.
I looked around and saw a sake 🍶 that I didn't know.
I ordered some to try 😄.
At first it tasted bitter like grapefruit...
Faded out quickly.
Next, a refreshing, pungent sourness
Then a refreshing sourness with a pungent spiciness spreads throughout the mouth. No sweetness.
There are so many kinds of summer sake 😄.
No sweetness, but I guess that's possible with summer sake 😄.
Thank you for the treat 😋😋.
This is the second drink ❕🥰.
First series of drinks
I asked for this one because I was attracted by the umami dry taste.
Since this sake is alky, it has a strong alcohol taste, but compared to the previous sake, it has a crisp and punchy impression!
The taste is deep and umami,
It has a sharp taste that is unique to sake with alcohol.
The impression is that it is a sake.
Sake with a crisp and clean taste.
6/10
The day after participating in the Kurobe Meisui Marathon, I visited Ginban near the Shinkansen station.
I was not allowed to tour the brewery, but there was a souvenir corner, and I was allowed to see it with my slippers out of the entrance hall, which looked like my home.
I was given an explanation of the brewery and bought a bottle of summer sake made with Tominokoso.
I had the impression that the sake was originally quite dry, and the summer sake had a crisp, light flavor.
I recommend drinking it well chilled.
I also put some ice cubes in a cup to drink it on the rocks if you like.
The Ginban brewery is quite large, and the site looks like a factory.
I guess it is a local sake brewery.
Nearby there was a spring of Kurobe, and local people came to fetch water.
I still feel that water is very important.
So after work, it's weekend drinking time! Today we went to Fujiki Shoten in the Ikebukuro area for the first time in a while.
We started with a summer sake. Ginban Special Junmai Summer Limited Edition. It has an astringent taste when it first starts, but later on, refreshing acidity and umami follow. This kind of sake is very summery.
When poured, it is quite yellowish and not daiginjo-ish. The aroma is sweet, but when you actually drink it, it is not a Junmai Daiginjo, but rather has a heaviness like Junmai or Yamahai.
It is a bit strong on its own, but when I paired it with a hot pot filled with ginger, the balance was just right and it was delicious.
It is a robust dry sake with a strong acidity, not a gorgeous taste like Daiginjo or Omachi. It is difficult to drink by itself, but it was good when paired with a grated radish hot pot. Sake
