My junior at work came to Morioka for a visit, so we went here to do a tasting together. I saw that the price was lower on the 10th for Father's Day, so I checked the date and found that it was exactly on the 10th ❗️ and I knew I had to buy it. ‼️ It tasted good too 😄.
Now, let's try it again. The nose has a ginjo aroma and a faint scent of ears of rice. In the mouth, there is a sweetness of rice, some alcohol, and a sense of ear of rice, as well as a hint of umami. The aftertaste is also refreshing due to the acidity.
Try it with yakisoba. The fat, umami, saltiness, and meaty texture of the minced pork together with the sweetness and sourness and the hint of aroma of this sake increased the overall deliciousness of the sake. ⤴️ Nice 👍

The aroma is gorgeous, the mouthfeel is clean and crisp, and the fresh sweetness and acidity of the unpasteurized sake is delicious!
I would like to drink it with oysters with a squeeze of lemon!

Sake available only at the brewery
A sake brewery fair was held recently!
Read as "Asabiraki". It is a raw sake brewed with black malted rice. The label showed nothing without a flash.
The aroma of this unpasteurized sake is a light peach-brown color, which I have not seen very often, and it seems somewhat sour. Light, fresh, sweet and juicy with a delicious acidity. The lingering finish was well-balanced and lingering.
It seems to be a limited edition, but I hope it will become a regular item.
The brewery is located in Iwate, the home of the Nanbu Touji, and has been brewing sake since 1871. Although I have not had the opportunity to drink much, I had a chance to have a cup of sake. I was quite curious about this sake brewery. The Junmai Ginjo has a slightly lower alcohol content of 14% and is characterized by its ease of drinking.
The aroma is not that strong after opening the bottle, but as for the taste, it is a very tasty sake with a good combination of rice sweetness and malic acid acidity. This is indeed a sake that goes well with a wide range of dishes. I drank it cold, but I think it would probably go well warmed up as well.
The umami flavor makes it a good match for sushi. However, it also has an apple-like flavor, so I think it would be good with cheese and fruit as well.
