Hi, FUKU san!
Three consecutive holidays for you, Genshimai-san 🤤.
I'm more and more interested in your delicious review of Quicksilver because I don't come across it often 😋.
Good evening, this is my first series of consecutive posts, and I am finally confronting this issue 💁.
Kawanakajima Genmai Junmai Daiginjo 2024BY✨
I finally met ‼️ Genmai-sama 🥹!
It's a Jun Dai, a hybrid type of Yamadanishiki and Miyamanishiki 😊.
The aroma is mainly savory grain aroma without being flashy at all. The attack is juicy apple sweet and sour flavor that spreads softly but is not harsh, and the aftertaste is a harmony of full alcohol, umami, and a good dry sharpness that even those who do not like sake can easily drink it.
It is quite hard to find, but I would like to try other junmai sake 😁.
@Jay & Nobby.
Good evening 😊 Surprisingly it was my first time. I've been reflecting on it lately, but I tend to stick to the good brands I know from the past rather than the new ones, so I'm going to try a little more of a challenge: ‼️
Kawanakajima Genmai, which I was sad to not get on the first day of my trip to Kanto and Niigata last month, was the first store I drank at.
On the second day, I was able to pick him up on my way from Yokohama to Niigata Prefecture 😊.
Polishing ratio 59
Alcohol content 15%.
There is a slight sweetness of rice in the umami, and after the bitterness is added, it finishes crisp and clean.
I had it cold at first, but on the second day, I was told that room temperature was recommended, so I had it at room temperature as well, and the umami was fuller and more flavorful 😄.
The bitterness is pleasant, as I felt with the Junmai Ginjo 🍶.
Good evening Jay & Nobby😃.
Yes😙 all the hard work on the first day paid off👍.
The Junmai Ginjo was more spectacular, but this one is easier to pair with food😊.
I tried to buy this one at the liquor store, but they explained that the aroma was not to my liking, and I had a bad impression of Miyamanishiki, so I stopped and bought Kinmonniki. I thought it was drinkable, so later I bought the Yamae Nishiki and tried it ✨.
I don't want to be rude to Sake Chiteno, but since it's online, I assumed the worst of the word of mouth I saw 😅.
It smells like a lactic acid twang. It has a yogurt-like flavor and also smells like honey in yogurt. Yes, depending on how you look at it, you can imagine that unpleasant smell of an over-fermented rainy season 🤣.
There is no gas, and the mouthfeel is soft. The sweetness is supported by the light umami, and the acidity is unexpectedly refreshing, but I also felt the sourness 🤔.
It was sweet and sour, not gobby, but surprisingly drinkable 😊.
Second day
The aroma was the same as yesterday's aroma, but the rest of the aroma was juicy and sweet, with a little bitterness 😄.
Fourth day
The aroma of lactic acidity is the same as the second day, but the sweetness is a little more clear and juicy, and there is a hint of bitterness 👍.
Third bottle of Genmai, this one tasted the best. Maybe I have a stupid tongue 🤣🤣.
Good evening, ichiro18!
I have a bottle of Yamae Nishiki from Genmai, but I haven't had the courage to open it because of the controversy 😭.
Thanks to your detailed review, I was able to try to open some of it 😭 Thanks to you ☺️
Good evening, ichiro18😄.
I'm impressed with your phantom dance challenge👍.
It's still tough 😅the unpleasant smell of an over fermented rainy season 😖 just hearing about it makes me want to refrain 🤣I might just go through with it if I see it!
Good evening, Mr. Ahuio😄.
I can't rely on the reviews of Genmai, because there are many opinions that differ from what I felt, but if I have doubts about the aroma, I'll start looking for the rough edges 😅 Enjoy the changing flavors of Genmai, Afuio-san!
Good evening, HinaHanaMama!
I know we have different tastes, but this Yamae Nishiki was delicious ✨If you don't like the aroma, you won't like drinking it 😅But it's not that there was a bad aroma every time 🤣🤣.
Good evening, ichiro18!
I'm sure you have a great inquisitive mind to try new sake, knowing that there are pros and cons 🎵.
I was just talking with a friend of mine who recently made his debut in sake and we were saying that it's both fun and difficult because you have to drink it to understand 😁.
Good evening, ma-ki-chan!
I'm a wimp, so I'm always tempted to try even the sake I'm not supposed to 🤣I have to try it to understand it, as you said, so I drink it to gain knowledge 👍If I think too hard about it, I get swamped, so I drink in moderation...
Mellow, crisp, fruity 🌸🍶✨
There's been a lot going on this year, or is there?
Though the aftertaste is a little persistent...
Sweet 🐴, spicy, bitter, etc.
Complex flavors are nice ✨✨✨✨.
I enjoy it very much(^-^)/

Kawanakajima Genmai Junmai Ginjo Kinmon Nishiki Unfiltered Nama Sake
I've been drinking a lot of good sake, but I'm going to have another favorite, Genmai.
I will have it cold.
When I pour it into the glass, a little bit of fine bubbles adhere to the glass.
The color is clear with a hint of yellow.
The upper aroma is of slightly sweet apricot bean curd and a little lactic acid beverage.
The mouthfeel is a bit thick, with a peculiar aroma of sweet ripeness.
The taste is also sweet apricot bean curd, lactic acid bacteria, and a tingling sensation in the aftertaste, but the sweetness lingers loosely in the aftertaste.
There is no bitterness that I felt before, but a peculiar peculiarity.
Hmmm, something like an off-flavor, not the usual image of Kinmon-nishiki Genmai...
I'll let it sit for a while before drinking it again.

Ingredient rice: 100% Kanamon-Nishiki produced in Nagano Prefecture

Good evening, Nemuchi 😃.
I just started drinking Genmai and I'm finding it quite a difficult drink 🤣🤣.
I noticed your 1900 check in congratulations 🎉🎉.
Hi Nemuchi 😃
Congratulations on your 1900 check-in: ㊗️
I'm so proud of you for serving Genshu Mai here 👍.
For me, a Kansai person, it's a real genshu (fantastic sake) 🤤.
I'm a Kansaiite, so I'm sure it's a real gem of a drink 🤤. Good luck for another 100 to get in ⚾️
Thank you ichiro18 🙇 When I drank it before, I became a fan immediately because of its rich sweet flavor, but it seems that Yamae Nishiki had a controversial taste and this year it was different from before. But maybe I just have a stupid tongue🤣
Thank you Hissan 🙇 I am also from Kansai and I am doing my best to capture Genshu Mai 🤣I will secretly teach you how to buy it in Osaka 😁I only post a lot at events and I am still a novice in the world of great sake meetings 🥸.
Masaaki Sapporo, thank you 🙇 I decided to go with my favorite Gensu Mai for the stealth Kiri number 😁 Maybe I didn't store it well or my taste buds are not right, but it was a memorial with a different taste Gensu Mai 😅.
Nemuchi-san, congratulations on your very belated 1900 check-in 🎉🎊.
In my mind, the image of Genmai = Mr. Nemuchi is being built up 😌.
I hope you will manage to get Yamae Nishiki and drink it too 🤗.
Thank you, bouken 🙇 We were stealthy and stealthy with each other 🤣I'm a Genmai guesser, but this time I thought you mistakenly labeled Kinmon Nishiki as Yamae Nishiki 🤣I've secretly secured Yamae Nishiki as well👍.
Nemuchi, congratulations on your 1900 check-in 🎉🎊 so late 🙏💦.
I'm so happy for you 🎉🎊That's very late 💦. I'm jealous that you can drink ✨. I'm jealous that you can drink more than anything else✨.
Thank you, Pon 🙇I've been on stealth killer duty lately because I've been posting a lot of events and not drinking at home 😅The original Kimon Genshimai is very good, but my wife said it smelled weird, so I think this one is special 💦.
