I bought Yamadanishiki Genmai at Awaya because there was some Yamadanishiki left. It is rich in sweetness and flavor!
The balance between acidity and fruity is also excellent. What is impressive is the caramel nuance with a sense of maturity. I like this one a lot.
In the evening, we enjoyed sake at the restaurant we had reserved!
The first glass of sake was Kawanakajima Genmai! The aroma was so good it made the counter smell great 😊.

This is the first time I have had Kawanakajima Genmai. It is a junmai ginjo made from Miyamanishiki polished to 49%. It has a refined aroma, soft mouthfeel, pleasant acidity, and a nice sharpness after drinking.

It's a sake that you can't drink unless you actively look for it.

It's been a while since I've had this sake, so my image of it was a little different.
I thought it would have a strong and rich aroma, but the second half was quite light and sharp.
The lingering bitterness was strong and could be tasted firmly in the throat.
I think many people would like this flavor statement.
