flos_lingua_estPersonally, Kawanakajima and Genmai are more difficult to obtain than Jyushiyo. I think Marie Antoinette once said, "If you can't buy it, just drink it at an izakaya," so this time I gave up on Jikin and tried it!
It has a good balance of sweetness, umami, and acidity, and perhaps because it comes after Kameizumi, it gives a subdued impression, but it also has a strong ginjo aroma, so I think it would be absolutely gorgeous if drunk on its own.
There is also a botanical impression somewhere, like shiitake mushrooms and earth. Hence, it is not completely for beginners, but I thought it is a sake that is popular with everyone, from moderate beginners to sake drinkers, which is no wonder it is so popular.
I would have liked to drink it when the temperature was a little higher... I think I would like it more when the umami flavor opens up...!

I think it's a refreshing type of Genshu Mai with a strong flavor 🤔.

Yesterday was the second day after opening the bottle.
It has a refined sweetness, clear and fresh.
It must be delicious.
We have 3 bottles left, so let's enjoy it with yaki-sai from Kakiyoken today.

I came across this pink label by chance at a liquor store in Chikumagawa 😆.
There was a grilled yakisoba from Sakiyoken 😀 It went well with everything else.
But Shinshu is getting closer 😄.
