It is similar to Kudokibe. It has a gorgeous ginjo aroma peculiar to unfiltered draft, a clean sugar sweetness, a faint cemedine taste, and a bitter taste that cuts through and is very tasty.
After a long time, Izakaya Shinkansen!
Genmai is still delicious 😋!
We secured Kawanakajima nigori and second fermentation active nigori at a special distributor!
Today we celebrated our daughter's birthday a day late 🎂.
We went to Itoshima to get some ingredients and celebrated with hand-rolled sushi.
We also took on the challenge of acquiring a certain sake and were able to get it, but this evening we opened a bottle of Kawanakajima Genmai, which we had acquired on our trip 🍶.
Polishing ratio 55
Alcohol content 15
Made with 100% Kinmon-Nishiki
The aroma is not strong and relatively mild.
The soft mouthfeel is boosted by a sweetness hidden in the umami, and the bitter taste and chirichiri-ness finish it off nicely.
It makes good use of the alcohol additives 😄.
The flavor of the fish 🐟️ and octopus (🐙) is enhanced, and the sake goes well with them anyway 😊.
My dad enjoyed it more than my daughter 😙💦.
Good evening, soumacho!
Happy birthday to your daughter🎉!
Thank you for the congratulatory comment to my wife as well ✨
Sushi rolls and sake with the family - what a wonderful sight 😍!
We are looking forward to seeing your daughter grow up 🤗.
Good evening, ma-ki-😃.
Thank you very much on my part 😊.
My daughter used to eat only salmon roe and corn for sushi 🍣 but before I knew it, she started to eat a lot of things including raw fish. Her sense of taste is also growing up, isn't it?
Hello soumacho ^_^
Happy birthday to your daughter 🎉!
Our family sometimes celebrates with hand roll sushi, it's good ✨.
And a delicious phantom mai de celebration too 👍.
Happy birthday to your daughter, soumacho 🎉🎂!
The sushi looks so beautiful 😳👍✨I'm sure your daughter must have been delighted 😻The Genmai also looks like it would go well with the sushi 😻
And I'm looking forward to 🎉🎊getting a certain sake too 😉.
Hi Pon 😃.
Thank you very much😄.
I got the neta from the opening of the produce market 🚗.
Gentai and sushi are unmai 😁.
I will open a bottle of sake as soon as I digest my stock 😙🍶.
Good evening, soumacho 😃.
Happy belated birthday to your daughter 🎂 🎉 with BF on the day and your family the next day! Nice celebration for your daughter too 🤗Nice that dad can enjoy it too👍.
Good evening, Jay & Nobby 😃.
Thank you too 😄.
It always warms my heart as a person with a daughter to hear about you and your daughter with him 😊The festive feast is a must 😁.
It's been a while since I've had a phantom dance ❗️
I didn't have a chance to open it
I had to put it away for half a year😅.
It's still delicious ‼️
It has a strong sweet taste but it disappears quickly with a hint of bitterness.
It has a strong sweet taste, but it disappears easily with a slight bitterness.
I like the fact that it is free of any bitterness 👍.
I'd like to try a different Genmai again ❗️
It has been a while since I had a bottle of Kawanakajima Genmai sake. This is my first special junmai.
Immediately after opening the bottle, I sensed a slight, habitual lactic acidity in the top aroma and attack, but it faded on the second day and was gone by the third day. I am not sure if it disappeared or I got used to it.
The aroma is discreet and the mouthfeel is gentle and mild. While it has the sweetness and umami that is typical of Genmai, the flavor of the rice, which is unique to Tokujun, is alive and deep enough to be savory. After the umami of the rice reaches its peak, it turns bitter and leaves a gentle aftertaste.
At first, I served it cold as usual at about 5°C (41°F), but as the temperature rose to near room temperature, it became mellower and the flavor of the rice seemed to be brought out even more. I don't drink it very often, but it may be a delicious sake when heated.
I paired it with a variety of meals over the three days and found it to be a great match with Japanese food, especially with grilled salt-baked Akinatai fish, which was a good match this year.
I felt that this sake had a different character from the other ginjo-shu I have had so far, even though they are the same Genmai.
Rice polishing ratio 55%, alcohol content 15%, 100% Kinmon-Nishiki
It is dry and crisp, with less floral and sweetness. It is a bit different from the impression of Kawanakajima Genmai so far.

Mild aroma
Soft on the palate, with a strong spread of umami.
There is little sweetness, but the moderate acidity brings it all together, and the mild umami acidity continues through to the finish.
A bottle that stands out for its well-balanced taste, just like a food sake.
4.25
Lactobacillus-like aroma
Slightly sweet, with a hint of alcohol on the nose.
A little bitterness, a little bitterness, a little bit of sourness.
Maybe I don't like it as much as I thought I did.
Hi, FUKU san!
Three consecutive holidays for you, Genshimai-san 🤤.
I'm more and more interested in your delicious review of Quicksilver because I don't come across it often 😋.
Good evening, this is my first series of consecutive posts, and I am finally confronting this issue 💁.
Kawanakajima Genmai Junmai Daiginjo 2024BY✨
I finally met ‼️ Genmai-sama 🥹!
It's a Jun Dai, a hybrid type of Yamadanishiki and Miyamanishiki 😊.
The aroma is mainly savory grain aroma without being flashy at all. The attack is juicy apple sweet and sour flavor that spreads softly but is not harsh, and the aftertaste is a harmony of full alcohol, umami, and a good dry sharpness that even those who do not like sake can easily drink it.
It is quite hard to find, but I would like to try other junmai sake 😁.
@Jay & Nobby.
Good evening 😊 Surprisingly it was my first time. I've been reflecting on it lately, but I tend to stick to the good brands I know from the past rather than the new ones, so I'm going to try a little more of a challenge: ‼️
