My first Odayaka. I have high expectations as I have many tastes for sake from Fukushima. The aroma and taste both have the acidity typical of a sake yeast yeast. The middle part is rather heavy, but overall it is light. The bitterness in the aftertaste is also strong, so it is refreshing. I have an image that sake from Fukushima has a strong rice flavor, but this one gives me a different impression. Let's try other specs.

Odayaka Junmai Ginjo Light Nigori Nama Fukushima Prefecture connection: NIIDASENSHU Ginjo aroma like fresh apple, peach-like sweetness, natural rice flavor, and a good amount of gas from the second fermentation in the bottle. It's spring 🌸😊. (I love light nigori)

. Junmai Ginjo Shiboritate Nama It has been a very long time since the last time. The aroma of the freshly opened bottle is like melon in yogurt. The taste is not really yogurt, but there is a sourness. Plum-like? There may be a slight astringency. The next day, the sourness becomes stronger, but after about 5 days, the sourness becomes mild, and the yogurt and sourness are just right and beautiful. After swallowing, you can smell the delicious alcohol on the palate.

Next was a Junmai Ginjo from Yasu. It is also a cup with a gentle and fruity taste that is typical of Fukushima. I had it with grilled crab with miso sauce, and it went very well with it.
