An experimental item made from a red (black) variety of rice. Promising profile: saffron, ginger, pomegranate, mountain ash. But very sweet, for such a profile it needs of course fermentation to the end, to dry. There is even a nice acidity in the finish, good. After an hour it opens up into prunes

Red sake from a type of ancient rice. My first thought was, "this is like the port wine of sake", kind of a strong particular flavor. It was in the "unusual" category and was certainly unusual indeed.

I've been wanting to drink it for a long time and finally came across Ine Mangaka🌸🌸.
When I was in Chiba on business, I talked to the guy at the store and he told me about this limited edition sake, brewed from ancient rice (purple-black rice) with a low rice polishing of 97%.
The first sip, just the supernatant.
The impact was incredible 🤣.
Is this sake? What is this aroma? It's not even wine 💦.
I would say it's a strong habit, but I've never encountered a scent like this before.
Next, let me stir it to mix the oli, and I'll take it. Oh, the aroma is still the same but I feel the texture/throat of rice, so it's a little calmer, not, lol.
