The flavor of the rice is robust.
Strong acidity and sweetness. There is also a hint of astringency.
Not difficult to drink, but a complex sake with a deep flavor.
I would like to try it heated in winter.
Katori 2021 Junmai Namaishio
80% 15% 720ml 1309 yen
Purchased at a select organic store in Sancha. Made with pesticide-free rice.
The sticker on the label says "Nironi" and I wondered what it was, but it turned out to be NINO-NY (2021).
The color is quite amber.
It has a spiciness on the tongue and an acidity that reminds one of vinegar. And it has a nice aged taste. This is amazing.
The warmed sake gives it more of a "sake yeast" feel.
The rice seems to be a blend of various varieties, including an unfamiliar one called "Yukikawake.
I confirmed that it can be purchased on Amazon.com, and I think it will be one of the top sakes I drank in 2023.

It is a unique sake with 90% polished rice and no additive yeast.
When I first drank it at a bar, I thought it was a bit of a surprise... but the strong backbone and deep flavor from the sake brewing process made it strangely addictive, and I bought it myself. It is a drink that invites food more than a capsule type drink.

Guts. Strong habit! Sour and dry. I thought the body blow would be too much, but it has 21.5 degrees of alcohol. It's a sake of kuze and sake strength. It has a Terada feel to it, but it's for the experts. 83 points.

Fermentation is great. It's not heavy, but it's very sweet. But it's not sweet, so fermentation is not hard. Yogurt that is not sweet. Katori is the best, but it doesn't taste like sake. A little buttery. 87 points

.
I bought this wine after an old lady at a liquor store recommended it to me.
It was my first experience with 90% polished rice.
It is a little sweet, but has a traditional sake feel to it.
Personally I am very satisfied 😊.
The color is more yellow than Kenrishi 😆.
