Another feature of our product is that we germinate our own first-class rice from Nagano Prefecture, which is grown under contract. Cleaned and washed brown rice is soaked in water for four days to allow it to germinate slowly. Since the rice is not purchased from outside sources or transported, it is environmentally friendly and tastes fresh.

Both had a nice gassy aroma, but compared to the rabbit (junmai ginjo, light nigori) I had earlier, the owl (junmai daiginjo) seemed to have a more refreshing taste.

Today I bought a bottle of Senjozo seasonal sake😋 at a local liquor store.
When you open the bottle, you can tell it's a sweet sake 😆.

The next day, we went downstairs for lunch.
We had lunch at a buckwheat noodle restaurant called "Cologne" in Takato Town, Ina City.
It is said that this Takato Town is the birthplace of Shinshu Soba.
It is a lovely castle town lined with warehouses with plaster walls.
At the foot of the mountain, there is the ruins of Takato Castle, famous for its cherry blossoms.
Inside the buckwheat noodle shop, you can feel the history of the area with pictures and old tools related to mountain climbing.
There was also a colored paper of the author of the manga "Gaku" on display.
The local sake is brewed by Kuromatsu Senkozo.
While strolling around the town, I found a liquor store and bought some sake.
The sake I opened that day was "Dobu to Yuzu.

It has the rough texture of doburoku with a fresh and slightly bitter yuzu taste 🍊.
It's not your typical yuzu flavor, but the rough shavings of the fruit are very tasty 😋.
