This Junmai Daiginjo spec test brew is made from a new variety of sake, "Shinkoshu No. 555 (variety name: Yamamizuki)" bred by the Nagano Prefectural Agricultural Experiment Station.
The elegant aroma stands out, with a hint of gentle fruitiness reminiscent of white peaches and green apples, and a dignified elegance without being overly gorgeous.
