I've been curious about the name for a while, and happened to come across it, so I picked it up to try a brand I didn't know. ☺️
It seems to be a raw sake that was shipped one year after production, so it's a bit of a lay-back 🤣 The aroma is definitely somewhere between a mature aroma like kijoshu or caramel and a chemically mature aroma. The taste also has a coffee, caramel, and brandy-like attack, followed gradually by the sharpness of junmai sake, and the finish is full and lingering with umami 😋.
It is best enjoyed on its own as an after-dinner drink, but it would also be great as an accompaniment to a hot pot (nabe) in the coming season.
Cloudy white color. Rice grains are drifting and the viscosity is high. The aroma is reminiscent of rice. There is also a fruity aroma reminiscent of pears. The mouthfeel is sweet, thick, and slightly effervescent. Aroma reminiscent of mixed fruit juices. The mouthfeel is alcohol-free. Short aftertaste.
KUROMATSU Senjo Doburoku

This authentic doburoku offers a freshness that harmonizes the sweetness of the rice with a refreshing acidity.
Doburoku is made by bottling the fermented unrefined rice (moromi) itself after the rice, koji, and yeast have been prepared and fermented.
Launched in 2012. It is popular for its sweetness, acidity, foamy texture, and lightness at 6% alcohol by volume.

Aroma and mouthfeel with plenty of maturity. It is easy to drink, with a crisp, clean aftertaste. Perfect for the autumn table.
KUROMATSU Senjo Junmai-shu Miyamanishiki Besshiki

Ingredients: Miyamanishiki from Ina Valley, Shinshu, Rice polishing ratio: 70%, Sake meter: +8, Alcohol content: 16
Miyamanishiki and Yeast No. 701 are carefully matured at low temperature for more than six months. The fresh flavor has been preserved while the taste has been mellowed. Sharp and crisp dry sake with a muscat-like aroma. It has a slight sweet aftertaste.
The dry taste is smooth with a hint of rice. The convergence is mild but slightly dry. The upper layer is clean and the lower layer is smooth. Well-balanced. A good food sake.
