This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The umami acidity has a strong impact. It would be good to warm it up as well. According to the staff at the store, they won't be making PURE PINK this year. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.

Kidoizumi is located in Ohara, Sotobo, Chiba. It is a rare brewery that uses high-temperature Yamahai (fermentation method) and I had heard that it has a strong acidic flavor, so I was curious about it. I looked up Sakewa and found that Peco-san drank a bottle that he had laid down last summer🍶. As expected of Peco-san, a member of the Perverted Sake Lover's Club 😌. I asked the master when I ordered and he said 🤔 it was hard this year. I had it cold. The first aroma is sweet with a hint of acidity. In the mouth, there is an elegant acidity with a hint of sweetness and umami. It is indeed hard. The sweetness and umami are thin and the rice doesn't seem to have been melted. I'm waiting for it to open... 😌 and the master. I'm waiting for the master to open it... 😌. There are many breweries in Sotobo with a characteristic acidity, such as Kidoizumi, Narumi, and Iwanoi, so I would like to drink them from time to time. Thanks for the food 🍶✨.

Drinking with my juniors yesterday First visit to a restaurant I found on SNS 10 of us had a drink at the counter and tables. I love Japanese sake bars! We decided to finish with a hot Kidoizumi. The slightly acidic taste is mellowed by the hot sake! We finished off with some hot sake and headed straight home! With some smoked cheese and salted squid!

木戸泉　非売品 15%　500ml 　醸造アルコール モノトーンなラベルに「Not for SALE」の文字。これは木戸泉酒造に行った時にもらったもの。タダなのだ。もちろん数種の酒購入して。タイミングも良かったのかもしれない。 開栓してグラスに注ぐとだいぶ色が付いてる。熟成のオイニーが分かる。 ミリンと果実が上手く合わさった味。 ウイスキーのようなスモーキーさがこれまたいい。 多分ブレンド酒なんだと思うけどこんな美味いのタダでもらえるなんてほんと嬉しい。旅の思い出になりました。 評価4.3（5.0満点中）　20230313

I saw it open yesterday in good spirits. I was going to drink it today. Thick and thick texture. Rice-umami. Not too sweet, just the right balance of sourness and astringency. After swallowing, there is a lingering scent of koji like cherry blossom cake. I like it!
