This is a big responsibility, but I'm glad that I'm pushing "Hakudakesen", "Hayaseura" and "Echizenmisaki", excluding the well-known "Kuroryu" and "Bon" 😁.
There are quite a few varieties of Echizenmisaki, but it seems to be positioned as a slightly more modern junmai than Stark Kaiser or Ihyakumangoku.
It has a melon aroma, similar to that of Kuroryu. Is Kuzuryu a major sake rice in Fukui?
The first day: cold sake. After a little muskmelon-like fruitiness, the umami of the rice gradually swells with a sweetness accompanied by a light acidity like ripe grapes.
The final taste is spicy or bitter, and it slowly finishes. After a week, there is almost no change.
40°C. It has an alcoholic aroma and is slightly lemony at first sip, with a slight orange sweetness mixed with the umami of the rice. The finish is dry and crisp.
At 45℃, the fruitiness fades and the spiciness becomes more pronounced. Personally, I prefer 40℃.
It is a standard Junmai-shu of a mild modern style that is perfect for a mid-meal drink.
Personally, I prefer it cold, but it is also good warmed at 40℃.
Continuing from the last time, this is Cape Echizen,
Kutouryuu version.
This sake is made from Kutouryuu, a rare variety of sake from Fukui Prefecture that was revived in 2014 for the first time in about 10 years. We were looking forward to it because we heard that Kutouryuu was recommended by someone who visited Cape Echizen just before our trip to Fukui.â
It is served at room temperature.
Slightly greenish appearance. The top aroma is a gorgeous aroma of sweet banana and blue melon, green bamboo, cypress, and freshly pounded rice cake.
From the smooth mouthfeel, the aroma of fresh bananas easily passes through to the nose, and the gentle acidity and umami of the rice can be felt firmly, although it is light. It has a mild bitterness and a short aftertaste.
When heated, the fruity taste of banana and the umami of the rice are more mellow and sweet.
Delicious balance of sweet taste and refreshing sharpness.
Both of the sake I compared are suitable for a light and refreshing mealtime drink,
The 🟣Gohyakumangoku is more mild,
The 🟣Gohyakumangoku is more mild and the 🟡Kuzuryu is lighter with a fresh fruity taste.
Both are delicious.

This time it is Echizen-misaki.
We visited the brewery because we stayed at Cape Echizen during our summer vacation in Reinokita, Fukui.
The brewery staff had just left and we were greeted by the father, mother, and dog, Choco, who gave us a variety of tastings.
This time we decided to take home two bottles of 🟣Gohyakumangoku and 🟡Kuzuryu with different rice 😊.
By the way, the brewery is near Eiheiji, not Cape Echizen😅.
I'll start with the Gohyakumangoku.
It is served at room temperature.
It has a slightly greenish appearance, and the top aroma is a calm banana with a hint of blue melon. It also has a freshly pounded rice cake and a little bit of green bamboo.
It has a smooth mouthfeel. The nose is full of banana aroma, and the taste is crisp with a soft acidity and mild bitterness with a moderate umami of the rice.
When heated up, the banana aroma subsides, and the soft acidity and the enhanced rice flavor can be enjoyed lightly, making this lightly heated sake one that can be drunk endlessly 😆.
The mainstay of Fukui sake is Gohyakumangoku produced in Fukui.
Ihyakumangoku tends to be a rather plain sake, but each brewery has its own originality and the unique flavor of Ihyakumangoku is good and never tiresome to drink. This was a sake trip that reminded me once again that Ihyakumangoku is also good.
Next time, we will go to the Kuzuryu version.

The heady aroma is a mildly fragrant ginjo aroma.
It was dry when first opened, but after a few days, the flavor settled down. The sweetness and umami have become more rounded, but the acid bitterness is crisp and clear. Delicious!
