I often go to the neighborhood for work these days, so I buy it at the brewery ^^*.
The aroma is very rich, like freshly cooked rice, which I've never experienced in a honjozo before.
Yet it has the clean and crisp taste of a honjozo.
After opening the bottle, the aroma settles down and the flavor picks up. I'd love to try this hot 🤤.

This is a locally distributed sake from Japan's smallest sake brewery, Sugihara Shuzo, which brews the famous hard-to-find brand "Imi".
I think that local sake from famous breweries like this is often a hit. Like Suzukagawa from Kiyosaburo Shimizu Shoten (Saku), Aizu Miyaizumi from Miyaizumi Meijo (Collage), and Izumikawa from Hiroki Shuzo (Tobiroki). I'm looking forward to it.
The aroma is oily, with a hint of umami.
However, when you put it in your mouth, you will find that it is very beautiful and slightly sour and fruity, unlike the impression of the aroma.
It goes in easily like water, and after you finish drinking it, the flavor appears slowly. Then it disappears as if it were melting. The taste is very elegant and thin. This is nectar, happy water. Even though it is thin, there is a solid sense of satisfaction.
It's not Ghibli, but it's like Clarice from "Cagliostro's Castle". She is an elegant and beautiful princess. However, she is young, has a bright core, and looks good with a smile.

Another brand of Imi no Kura!
They say it's the same tank as the Jun Gin from the Imi brewery.
It has sourness and bitterness in the sweetness that is typical of Imi.
It's like a sake-within-a-sake!
I've reserved a bottle for next season and I'm looking forward to it😆.
This is the second bottle of Chiyonohana that my parents sent me. It has the typical Chiyonohana fruitiness and a slight carbonation. It's delicious.
It's a sake, but it seems to go well with mozzarella and other refreshing cheeses.
I couldn't buy a bottle of Tokujun from Igami...
So I opened this bottle from the same brewery!
It's hard to get a bottle of Imi, but
It's not easy to buy a bottle of Ikimi, but you can buy as many bottles as you like if you make a reservation at the brewery.
The tank is the same as the one at the brewery, but rumor has it that the flavor is slightly different.
The melon-like fruity taste is almost the same as that of the Ikumi.
When I went to my parents' house in Gifu, I picked it up at the brewery.
I also got some sake lees!

I got this sake on the way to a sake brewery tour the other day. It is a good sake with a clear but complex aftertaste👌.

Sugihara Shuzo started with this sake.
While it has the melon taste typical of Imi
It has the meloniness that is typical of Imi, but it also has the robust sake feel that is typical of Alzoe.
I think it goes well with meat and sauce rather than fish.
Advanced drinkers like to heat it up.
If you're a beginner, it's best to drink it cold.
