For the first time, I reserved and purchased sake directly from the local Sugihara Sake Brewery.
It is freshly pressed sake.
Melon-like aroma from the first sip.
Both sides of the bottom are numb, and the umami flavor comes with a zdong.
Delicious! It's so delicious!
If I could drink such good sake, I would make a reservation and buy it regularly.
It goes well with cream cheese marinated in molasses and anything else, but it goes really well with this. It is a strong and delicious sake that envelopes strong snacks.
Even though it is a special junmai, it has a slightly nice aroma on the palate. It has a mild taste even though it is freshly pressed.
And yet, like a special junmai, it goes well with hot pot.
This is very delicious. If it tastes this good, then Imi must be...very tasty.
Chiyonohana Special Honjozo Shiboritate.
When it is first served from the ice-cold cellar, it has a mild iso-type aroma with a hint of alcohol.
It has a soft, flabby texture on the tongue, but on the top of the palate, there is an alcohol taste, a long but gentle sourness and umami, and a sharp sweetness characteristic of the Sugihara Sake Brewery.
It has a strong flavor reminiscent of Imi, but with more soil than floral.
This is a sake that I would like to pursue this season.
Sugihara Shuzo, "Japan's smallest sake brewery", brews Chiyonohana, a local brand of sake such as Imi.
This special honjozo is the first of their freshly brewed bottles.
The appearance is a slightly pale yellow-green color with a misty, very faint orikara mist!
Orikagara-mist delight!
The aroma is subdued and gentle, yet aromatic.
Fruity with apple, pear, melon, and blue banana peel, with a coolness of alcohol.
The rice aroma is about the same as that of Kamishinko.
The smooth texture gives off a thick sweetness that is juicy and contains the umami of the rice, and the edgy stimulation of the alcohol passes pleasantly through the palate and into the nose.
The fresh freshness of the freshly squeezed flavor flows beautifully and finishes with the gentleness of orikara.
The mild fruity aroma is also pleasant, and the lingering aftertaste of alcohol is very gentle.
This is...extremely delicious!
On the 6th day after opening the bottle, the aroma is gentle and noble.
The aroma is gentle and elegant, with no sharpness, and the taste is unforgettably clean and fresh with an elegant sweetness and a light, refreshing acidity.
The finish is sharp and lingers gently and moderately.
Truly wonderful.

This is a sake that is distributed within the prefecture by the Sugihara Sake Brewery, which brews the famous Imi, the smallest sake brewery in Japan 🙌.
This one is a complete clear sake. Tachika has a darker pineapple/tropical flavor compared to Imi 🏝️, but I personally like the more mature, clear pineapple flavor ☺️. The flavor is mainly sweet and tasty, but it has a clear, crisp aftertaste and is made so you don't get tired of drinking it, which I really prefer 😋😋😋😋.
I can feel the depth of Mr. Sugihara's spirit in this bottle, but I don't have his usual poems 😅.

This is the second year we have started drinking it.
It has a slightly golden color, a little spicy, a little hot, and a little rice flavor.

Today I was able to come to my favorite standing bar, chuin, after a long time 😊.
First, here is a Chiyonohana Shiboritate Nama Tsume, a local limited edition from Sugihara Sake Brewery, which brews Imi.
It is aged in ice temperature for about 5 months, a specialty of chuin.
The exterior is a warm crystal.
The aroma is very gorgeous, yet gentle, with hints of apple and melon.
The soft mouthfeel is stimulated by the tingling alcohol.
It starts with acidity, develops into a molasses-like sweetness, and then the sharp alcohol rush to the back of the throat.
It has a good sharpness and a short aftertaste.
As the sip goes on, a slight bitterness seeps through from the mid-palate to the back of the mouth, and there is a slight astringency on the tongue.
It retains the freshly squeezed flavor, but the ice aging has made the stimulation milder.
This is the kind of sake you want to linger over in a bottle.
This has nothing to do with sake, but 4 elderly men and women came to the bar and made a lot of noise in a very Kansai-like (sorry, I mean bad) way 😅.
Fortunately, they didn't get involved with us, so we were able to enjoy our drinks.
When I enjoy good sake, I want to be beautiful in the way I drink it 😌 and at the same time, I think it is important to age well 😌.

The fruity aroma is mild and mellow.
The sweetness is accented by a slight bitterness. The lingering aftertaste disappears nicely, but only the bitterness remains softly.
It is a sweet jungin sake, but it is also a good sake to drink with food.
