Finally, my favorite sake bar has closed. Eleven years after the earthquake, the building has deteriorated so much that the entire building has been decided to be demolished.
This restaurant not only introduced me to the world of sake, but also fostered a network of contacts with various people, including sake professors.
Fortunately, I am not parting with anyone, as I have a family relationship with the store's mom and sake master. However, I have to say goodbye to that shiny counter. It was mentioned in your post.
I was able to get some half-empty sake from the restaurant, so I will post my impressions of that for a while.
First up is Chiyonohana.
This one was served on the last day of the restaurant. It is another brand of Sugihara Shuzo, which is known for its Imi.
It was brought to us by our sake master, but it seems that even he has difficulty obtaining it, and it is almost impossible to drink in the Tohoku region.
The moist and calm heady aroma and the heavy sweetness in the mouth are truly Imi. The lees give it a full-bodied flavor, and it even gives the impression of being thick and smooth.
The finish is crisp with acidity and bitterness, so even though it is so rich, you can't help but drink more and more of it. It is still a mysterious sake.
