I got a local sake from Imi ‼️‼️
The master of the izakaya I often go to has been asking for a bottle of ikimi for a while, so I brought it in and drank it 👍.
Cheers to the 6 of us, including the regulars 🥂.
The aroma is like pineapple from a can. It is a little sweet with a hint of sourness.
When we drank it, it was so sweet 🥂‼️‼️
I knew this brewery was sweet 🤣.
However, I personally like it better than the previous Sagami because it has a little more sharpness than the Sagami I drank before 😊.
If it didn't have this sharpness, I wouldn't be able to drink it as a refreshing drink 😥.
I think it's a good idea to have a little bit of a kick to it! I can't drink a lot of it 😂.
I paired it with Master's homemade pizza and the sweetness is nice with the cheese 🍕 Well, it's sweet though 🤣.
I always order a bottle of beer first,
I always get two glasses when I ask for it 🥂.
On this particular day, it was crowded and they only had one of the usual glasses and the other one was a little bigger.
I asked them to pour beer into both, the smaller glass for me and the larger glass for the master...

This is a freshly squeezed special honjozo of Chiyonohana.
It is a local brand of Sugihara Shuzo (Ibi-gun, Gifu Prefecture), which brews Imi, and comes in three varieties: junmai ginjo, special junmai, and special honjozo.
This summer I drank a junmai ginjo that had been aged in ice temperature for five months, but this is my first time drinking a special honjozo or a truly freshly squeezed one.
The appearance is warm crystal.
The aroma of rice and koji is fresh, with a strong hint of green bamboo.
The mouthfeel is full of deep sweetness and firm umami, followed by a slightly stimulating acidity that quickly spreads to the palate and finishes with a slight alcohol taste.
The lingering aftertaste is a gentle sensation of acidity and alcohol.
After swallowing, there is a big impact 😳.
The 17 degrees gives a thump to the body that has been accustomed to low alcohol drinks.
When you roll it around in your mouth and let it get some air, the acidity dissipates and you can enjoy the juicy sweetness and thick umami, which is a nice touch.
It has a strong flavor, but the acidity and the sharpness of the alcohol make it easy to drink.
It seems to be very satisfying, though it will make you feel very drunk very soon 😄.
I was thinking that I envy the locals ☺️ and was told that unlike Imi, Chiyonohana is sold by reservation at the brewery and comes with sakekasu (sake lees) 🍶.

This is a freshly brewed Chiyonohana Junmai Ginjo-shu from Sugihara Shuzo in Ibi-gun, Gifu Prefecture.
This is a local brand of Sugihara Shuzo, which brews Imi.
I have never had a bottle of Imi, but the brewer's comment on the back of the label is very unique, and it reads something like, "You wouldn't write that on a sake label, would you?" I love it because it conveys the warm and cozy atmosphere of the brewery.
The appearance is a light cloudy mist white.
The aroma is astonishing😳.
It smells like roasted cheese Parmigiano-Reggiano with a touch of honey!
Other aromas are savory like dried baked fish, sweet and savory like caramelized nuts, and a minerally aroma with a hint of overripe bananas in the background.
I've never had this type of aroma before😳 but it has a depth that is gradually becoming addictive: ☺️
The attack also has a cheese aroma with a sense of maturity and a thick texture.
The middle part of the attack has a firm sweetness and umami of rice, followed by a slight acidity and a light alcohol finish.
The rounded sweetness of koji remains in the aftertaste.
This is why sake is so interesting. ☺️
I felt the depth of the wine that I might get swamped with it.

Today is the start of a new year and I'm in a good mood, so I opened a bottle of sake sent from Gifu 🎉!
It's a junmai ginjo-nama-zume from Sugihara Shuzo, lightly cloudy with an elegant sweetness that I thought was delicious 🥰.
I can't tell the difference between this and the Imi, but as long as it tastes good, I'm sure it will be great, and the handmade label is a nice touch 👍.

Chiyonohana? I think it is a Chiyonohana, but this is a local brand of Imi, and the tank is the same...so it must be premium 🤗.
The color is lemon gold and the aroma is mildly creamy with a hint of lemon!
When you drink it, it has a slightly fizzy, beautifully umami mouthfeel, mellow and full-bodied.
The lingering aftertaste is clear and disappears, giving it a high quality that is hard to believe it is a Tokujun.
The best of the year so far 😍.

Last Saturday I went to a small liquor store near Ogaki Station, which I found last year, for a bottle of Chiyonohana Special Jun.
Basically, you have to make a reservation to buy Chiyohana at the brewery in Imi, but this liquor store sells Chiyohana. There are only a few bottles of Honjozo left, but there are still some Tokujun left.
However, they don't have any more Tokujun, but they don't have any more of the Sagemi. I haven't had it myself yet 😭. I'm still waiting for it 😭
But it is still delicious. I'm sure it's because they use the same tanks. I'm sure it's good 😋.
