The other day, the Kitamura Sake Brewery visited the Nara Family. I thought I had declined the tasting because my house was too far away from the brewery, but I ended up getting six kinds of their limited-edition products. Is this what you call a "screwed-up sake drinker"? I only bought one, but I should have asked for all of them.
Yesterday, my brothers and I got together for dinner.
It was our first ✨Kitamura Shuzo.
Sake rice: Gohyakumangoku, Alc 17, fruity but not too sweet, went well with the meal.
It is unfiltered but clear and refreshing!
The taste is so robust that it is hard to believe that it is 5 million stone. I wonder if it is possible to bring out so much flavor from Ihyakumangoku. It becomes gorgeous when drunk with air, but it is different from the gorgeousness of sake from the Tohoku region. You can see how great Nara sake is. Super delicious, highly recommended!

Today I took part in the Sake Navigator Course! Some of the things I learned in the Sake Certification Level 3 course came directly from the course, so I was able to learn a lot as a review.
I can only vaguely remember what it tasted like because I was concentrating on writing the notes, but the junmai sake was so plump and delicious that it made me think it had been heated👍.
I'm not sure what the other brands are, but I've tasted Ikatani, Yamahai and Junmai Daiginjo unfiltered. Paired with the Sensei's recommended dorayaki and cheese, it was fantastic!
Now I'm a sake navigator. Now it's time to become a sake taster...!

Transparent crystal silver-green color.
Yellow apples, ripe pears and melons, honeysuckle, serpentine, cypress and white dumplings. Plus floral nectar sweetness and lime.
The attack is a little strong and mildly sweet, the acidity is there and smooth, and a full bitterness takes over on the long finish.
This is another solid but nicely made image. However, the sweetness is quite strong, so your taste may vary.
Hyakusenmang Shojo Kitamura Sake Brewery Nara
It has a unique aroma and taste of old sake, a good taste of rice, a little acidity, and finally a pungent taste that cuts your tongue. It soaks into the bottom.
The color is a beautiful transparent amber.
