まつちよI attended the Ozaki Sake Brewery meeting held with Mr. Ozaki, president (toji) of the Ozaki Sake Brewery.
The first cup was Iwakigawa's Kamisen🍶.
They prepared a special draft sake for this meeting 😊.
First, it was served cold.
The first aroma is just a hint of acidity.
The first sake is a cold sake with a slight acidity.
Next, warmed sake.
The first aroma has a slight alcohol taste with a hint of grain.
The top aroma has a slight alcohol taste and a hint of grains.
Slight sourness and a hint of rich sweetness on the palate.
The impression is very different from last year's hi-ire 🤔.
I wonder if it's a bit hard because it's freshly opened.

I've never seen sake before 🍶. まつちよThis is mostly consumed locally. まつちよThe fourth glass of sake was somehow heated as a result of a sake discussion with the customer next to me and the proprietress.
Since the store sells Aomori sake, I was recommended Iwakigawa Josen (not registered in either SAKE WA or SAKE TIME) by Ozaki Shuzo, famous for Ando Suigun (Ando Suigun).
It is a honjozo sake.
The aroma on the nose is mildly sweet and sour with a hint of alcohol due to the fact that it is a heated sake.
The palate has a refreshing acidity and a full-bodied sweetness.
It was a nice, clean, crisp heated sake.
We drank some at room temperature, but the sweetness and spiciness increased a little more when the sake was heated. まつちよThe proprietress regularly buys from a liquor store in Aomori.
