Unexpectedly, Yamamoto opened a series of bottles. To all appearances...almost lees❄️ I twisted the cap and it came up, so I put it in the freezer for a while.... After that, the bottle was opened without any problems, and the lees were automatically stirred 💃. The aroma is faintly acidic, grapefruit type, maybe. When you drink it, it is full of lees, fluffy on the palate, and mellow! Of course there is also some schwash, enjoyable. The taste is not sweet at all, but the lees part is soft and mellow rice flavor. There is a sweetness to the rice. Even though the lees is not solid and dissolved (liquid), it is strangely fluffy when you drink it. Is it because of the carbonation? It's strange....thick and fluffy, and then sizzling! The next day, I drink the supernatant. A little sourness and dry rice, still no sweetness. Shuwa, rice, a little bitter at the end. The mixing feeling is not so different from the day before? When you warm it up, the ♨️ impression doesn't change much, but the rice is a little sweeter and firmer. Delicious shuwa dry. It is good with a meal, but since it is mellow and fills you up, it is good to drink it with simple snacks such as miso (soybean paste).

This is another series of sake that I want to drink at home but for some reason can't afford to buy every year. This is "Do" from Yamamoto Sake Brewery, which brews Yamamoto, a sake that I have always been curious about as a nigorist. It seems that "Do" is always released a little after the sake I really want to buy, so when I see it at the store, I always think, "Aha! Whenever I saw it at the store, I had to pass it up because my fridge was always overflowing with it 🥲. This is the first time I've had this sake, including outside drinking 🍶. Since it was an outside drink, they stirred the tailings well before pouring it. By the way, it looks and sounds like doburoku, but it is not doburoku because it is "seishu" and is filtered. The appearance is a snow-white color with a hint of green and green, with beautifully spacious tailings dancing in the air. There is a rich aroma of rice in the tailings, with a slight pickle aroma in the back that is not unpleasant. The mouthfeel is pleasantly mellow with a gassy, shrieking sensation. There is almost no sweetness, and the taste of the rice in the gas and the tailings spreads dry and flat. The clear umami flavor is well balanced by the acidity and gassiness. The bitterness of the tailings lingers moderately in the aftertaste. I see what you mean. The dry, crisp, clean rice flavor is irresistible to those who like it 🍶. I can see why it is so popular!
