I visited again after making an appointment to visit the brewery 😆The explanation of the tour of the brewery is a commemorative version of the UNESCO registration 🎊They explain the points that were evaluated in the registration 😆.
(The points that I remember are)
The brewery uses rice as koji in its original form.
The traditional production technique has been inherited by the Touji system.
The parallel double fermentation technique is unique in the world.
Parallel double fermentation, a technique unique in the world, and many more... If you are interested, please visit the brewery 🥳.
So I bought a bottle on the way home 😄.
(No. 4 doesn't fit in the fridge... 😅)
Amber color there 🟨.
Dark sweetness with a touch of stickiness 🤔.
Weak acidity as well, deep taste 🟨🙂↕️
Firm taste 🧐.
Tama Pride's sake brewing policy is "to go well with meals" and the toji's recommendation was fried chicken 🍗, but I didn't have any fried chicken in stock 🤣.
Where to buy】Ishikawa Sake Brewery
Snack] Miso-glazed pork
After visiting a sake brewery there, I had it bottled and purchased at the "December Appreciation Day" weigh-in corner. It has a pear-like aroma with a tangy yeast flavor and a slightly bitter aftertaste. It tastes just like it was freshly pumped.

Snack] Fried chicken from "Shokudo Ishikawa
After visiting the brewery, we had the sake bottled and purchased at the "December Appreciation Day" corner. The brewery uses cedar chips to fill the barrels, which gives the sake a strong cedar aroma and a hint of sweetness, just like you would taste in a square.

This is "Tamanboast Junmai Mucho" from Ishikawa Shuzo, Fussa City, Tokyo, one of the "Three Tokyo Sake Breweries Junmai Sake Set for Comparison" that we received as a gift.
It is a delicious sake with a full aroma and a delicious junmai flavor.
It's a quick and easy way to get through the day. Goshinshu. A little habitual. Easy to drink, but the habit is hidden. Country style. Old classic. 83 points

Freshly shiboritate kameguchi purchased at the Ishikawa Shuzo November Appreciation Day. The fruity, flowery aroma gently rises along with the zing of alcohol that is typical of freshly squeezed new sake.
Ohhhh 🥹.
This is delicious. Sweetness and acidity like cucumber and white grapes. The aftertaste is refreshing, yet lingering and makes you want to take another sip.
