This is the third time I have purchased this wine since my trip to Wakayama 3 years ago.
The last time I bought it, I didn't feel the same taste as the first two times, but this time I could feel the flavor and it was great.

Tasted and bought the ones I liked.
It was quite yellowish in the tasting,
It had a mellow sweetness.
But when opened, it had a little bit of color.
The aroma is sweet with a hint of koji.
The taste is light and dry, with a lingering aftertaste that is full of the umami of a sake yeast stock. ✨️
On the third day, both the aroma and taste became more mellow and sweet.
It was an interesting sake to enjoy the process.
Sake made in the 2021 brewing year and aged in the brewery. The initial aroma is sour like yogurt. On the palate, there is a sourness and a slight bitterness, but the umami of the rice can be felt. It has a sweetness like dried grapes and a sense of maturity. It is good lukewarm, but I prefer it cold.
