The water must be from the same source as the 48 Falls of Akame. The water is good. Good sake.
I was tired of the lunch toast sake at the Ise-Shima Summit,
This is the first time I have seen Aizan by Takihama. And it is a Junmai Daiginjo.
It has a good balance of sweet, clear, and niggardly.
Takihantan does not have the image of Mie and I always mistake it for Niigata.
#Drinking at home
Takihantou has a certain umami in a refreshing taste, and it has a refreshing mage among mild umaguchi sake, but after drinking it for the first time in a while, the umami is more robust than expected, with a crisp aftertaste!
The balance between umami, sweetness, and sharpness is exquisite, and unlike the umami followed by sharpness of Kochi sake, there is no other sake that has such a tight, integrated umami and spiciness from the start.
Like Rei in Fist of the North Star.
Of course, it is the best sake to drink with food, but it is also delicious on its own, and you can continue drinking it without giving up.
This is a sake that I want to keep on hand.
Taki Pride in Nabari City, Mie Prefecture. I had it during my summer vacation trip to Ise-Shima.
When you take a sip, you feel a melon-like sweetness for a moment, followed by the sourness, bitterness, and dry aftertaste characteristic of Yamahai, which develops in a complex way. It goes well with meals and has a very unique taste, but it is my favorite type.

Gentle ☺️ Sweet umami. It is not sticky, and there is no resistance. But on the contrary, it may not have much character. Good with kintoki-dai kombujime, which has a delicious and gentle taste👍.
