This is the first time I received this Takihama. I bought it from Imadeya's hanpukai.
I thought it would have a strong umami flavor since it was made with 80% polished rice, but it turned out to be right.
The flavor is more classic, and I personally prefer it cold.
I prefer this sake at a temperature where I can drink it at a temperature that is both refreshing and accentuates the umami.
It is not sweet, so it is dry. It is mellow and dry.
If I find another sake that interests me, I will buy it.

The souring yeast is a home-cultivated triple mother. The brewing water is from the subsoil water of a waterfall of which we are very proud. It is truly a junmai store with a Mie zukuri. Please enjoy the concentrated flavor that spreads from the clear mouthfeel.

Slightly acidic, with a hint of bitterness.
Firm but not heavily dry, with a rather clean aftertaste.
Neat and tasty.
