Local Mie sake.
It is 50% polished, but claims to be a ginjo.
The aroma is subdued, and the ginjo aroma is not very strong.
The acidity is almost imperceptible.
It is not fruity, but has a nice sweetness and umami.
I compared cold and warmed sake.
Cold sake and hiya are good, but heated sake is also great.
The aroma is more pronounced and the umami is more pronounced when heated, but it's hard to throw away the refreshing feeling of cold sake.
In Mie, Jikin and Saku are well known, but even if it is not as well known nationwide, it is my personal favorite!
