Takihitama "HAYASE" Dry sake Junmai Takihitama "HAYASE" Dry sake Takihitama "HAYASE TAKISUIRYU Rated 4.4-4.3 Rice:Iga Yamadanishiki (Koji), Toyama Gohyakumangoku (Kake) Rice polishing ratio: 60%, Sake meter: +11, Acidity: 1.5 Yeast used: Sake yeast preserved in the brewery, Alcohol level: 16%. This is a junmai sake with a dry, persistent taste. It is light on the palate, but the umami of the rice spreads slowly in the mouth. It has a crisp throat and aftertaste that is typical of "dry junmai" sake. A perfect mid-meal sake. This sake was served at the 2016 Ise-Shima Summit.
