I had super high expectations since the summer sake here was the number one sake for me as a non-drinker. The sake was not that fruity, but had a bitterness typical of sake.
Polishing ratio 50%.
Raw material rice: 100% Yamadanishiki
Ingredients: Rice (domestic), rice malt (domestic)
Water used for brewing: Spring water from Benten
Alcohol percentage 14.5
I wanted to try it in a four-pack bottle if possible. However, I couldn't help but buy it because I found it at a supermarket (Queen's Isetan) near my house. If you are looking for sake that you can't find at liquor stores, you may be surprised to find it at Queen's Isetan. Daimine is always available there, so I recommend it! Off topic
Now, let's take a look at Omine, a newcomer from Yamaguchi, and see how good it really is!
It has a sweetness, but more than that, it has a refreshing aroma! The brewing water is so smooth that you don't even realize you've been drinking it. The sweetness and sourness that emerges from the water is astonishing! It tastes just like biting into a pineapple, just the way you would want to drink it in the summer. After tasting the mineral sensation, a slight astringency disappeared with a sharp taste.
I found it to be a wonderful and easy way to drink high quality sake with an upscale feel, just like Tasake's Junmai Daiginjo sake, Hyakuda. To all the food stall people in Japan, please sell this guy as a drink.

Tonight was my first "Oomine" 🍶 in a while.
I've been craving something sweet and tasty 😋.
I'm not sure if I'm keeping up with the seasonality at all.

Muscat, white peach, moderate acidity and strong sweetness. No bitterness, miscellaneous tastes, or alcohol. The taste is a little more subdued than that of summer sake. Maybe because it is fire-aged.

I found a cup of Daimine's sake.
I had to buy it.
I thought about drinking it as it is,
I thought about drinking it as it is, but then I put it in a wine glass and drank it.
The aroma was different from that of the cups I know,
It has a gorgeous aroma.
When I drank it, it had a fruity taste like muscat.
I couldn't help but say it was delicious.
It's a cup sake, so it's easy to drink,
I would like to have more of this quality.
The small bottle has a summery design.
The sweet and light impression and aroma are the same as the other sake rice in the ohmine 3-grain fire-brewing.
Among them, I think the acidity and bitterness are the tangiest. It is citrusy and refreshing, like grapefruit. Beside that, there is a soft sweetness like Japanese pear.
I think it's the most refreshing of the series (I'm not sure because I haven't finished it yet...).
At any rate, it is delicious.

It is very delicious again this year!
It has a mild sweetness that makes you feel the rice is mellow and gentle, and the lingering aftertaste of crispness and slight bitterness is superb.
Slightly pithy. Sweet and sour, pineapple-like fruity. Slightly yogurt-like aroma. Slightly thickened mouthfeel but light aftertaste. Almost no bitterness. It is easy to drink. The illustration on the bottle is also nice.
This is a summer sake version of Daimine, using Dewasanbara rice. Dewa Tsanzan is actually the first original Yamagata sake rice, and it is said to have been used for about 10 years. It is quite exciting that such rice is used in Yamaguchi Prefecture after going through the evaluation process. The specs are also Junmai Daiginjo specifications with a rice polishing ratio of 50%.
As one might expect, all of Omine's sake is refreshing and easy to drink. The sake is not heavy, and the acidity is slightly suppressed. It tastes like peach and a hint of apple. It has just the right amount of sweetness. I wonder if the water from Akiyoshidai is low in hardness.
It is not a strong type of water, so it may be easy to drink with sushi.
