We suddenly started with premium sake, so next we ordered a light dry sake.
What came out was Fudo Light Dry.
It was served with the Great Value Champion Sake, which won the best inexpensive sake at the International Wine Challenge (IWC) last year.
No, it's dry, light, and above all, it has a luxurious taste without any clutter. I recommend it.
Ingredients: Rice (domestic), Rice Koji (domestic), Brewer's alcohol
Rice: 100% Akita Prefecture Miyamanishiki
Rice polishing ratio: 65
Alcohol content: 15
The color is slightly yellowish, reminiscent of white wine. A refreshing aroma, a mixture of sweetness and acidity, hits the nose. The taste is fruity and soft on the palate, dropping off leaving a slight astringency and pungency on the tongue. The overall taste is a bit peculiar, but very broad and rich.

The Edo shogunate granted the right to manufacture ironware called "nabeza" to the prominent families in various regions. The predecessor of this brewery was the one that was entrusted with nabeza in the Shimousa area.
In the Genroku period (1688-1704), the Sakura Clan, which ruled this area, gave the brewery shares and began brewing sake in front of the Narita Mountain gate, known as "Narita no Ofudo-sama.
At that time, long-established breweries were called "Onana," and it is said that the name "Nabe-ten" came from the combination of "Nabe-za" and "Onana," thus giving the brewery the name "Nabe-ten.
The third item of the day also ended up in the cold storage room.
The young waitress again told me that there were a variety of new items in the cold storage!
Oh no, I found the unmistakable Black Label!
I had already discovered it on SNS a while ago!
Let's have a drink here before we meet up with Mr. Noe and Ms. Fukurokuju!
I checked out Sake-no-wa and found that we have met at this time of the year!
Congratulations for the third year in a row: ㊗️
Aroma?
Taste, a little harsh!
I wonder what this year's recipe was?
There was also a Pile Driver, a drink that I was curious about, but maybe they were both very strong drinks!
The fourth category of the day is Kiri, so let's choose carefully... ♪
I mean, I've already decided.
Lunch was at an omu-rice restaurant that we first entered near our customers.
It was a small restaurant, but it was almost full 🈵.
There were two kinds of sausages and even fukujinzuke (pickled vegetables) on top!

Tangy mouthfeel.
The mouthfeel is rich, but strangely light, yet balanced and rich in flavor.
The aftertaste is also mild.

Mizumoto" sake is brewed using the "mizumoto" method, which is said to have been invented in the Kamakura period (1185-1333).
Mizumoto is a method of soaking koji rice in water to propagate lactic acid bacteria, and then using the strongly acidic water (called soyashimizu) as the brewing water to grow the sake mother. Nabeten modifies this process and adds yeast No. 6.
The unique refreshing acidity and the sweetness and umami of the No. 6 yeast make it a "rich, mellow, strongly acidic, umami-kuchi sake" with a rich personality. This is a small release, so please give it a try.
Hiyoroshi series No.4.
Jacket value... 5/10
Autumnal design, but not so cool.
Ki ... 15/20
The smell is mainly Alc with a yogurt-like flavor, and the taste is round with minerality.
Sei... 15/20
The harmony of the sweet-tart minerality and a hint of Alc bitterness is exquisite, and the apple-like sensation on the tongue is unmovable, but the orthodox hiyaoroshi feeling is strong here as well.
Turning ... 16/20
The sweetness changes from round to clear, and you can feel the fullness of the flavor.
However, even after all this, it still does not express Fudo's character.
Yui ... 15/20
It has a moderate burn and a moderate, but sweet aftertaste.
COSPA ... 8/10
Purchased for 1,760 yen.
The taste is textbook of hiyaoroshi.
Score: 74 points
There is no doubt that it is delicious, but what we seek is always a sense of uniqueness, and shouldn't we seek that in hiyaoroshi? But if you are looking for consistent deliciousness, hiyaoroshi is the one to go for.
My favorite "Fudo".
First time to try the black label😍.
Exciting sip!
Slowly dry... then
Slowly dry... then slowly gorgeous!
Mysteriously tasty dry sake!
It is clear and fresh in the mouth. The balance of sweetness and acidity is also good.
It has a smooth and sharp taste. The aftertaste is also pleasant. Although there is nothing outstanding about this wine, it is one that you should always have on hand.
It has a pleasant, gentle sweetness, like a lactic acid bacteria drink. It is soft and easy to drink, and the refreshing flavor that escapes through the nose is very tasty.
It is the kind of sake that can be fully enjoyed on its own rather than paired with food.
