This is a bottle of original sake, specially ordered by the liquor store, and is a blend of aged sake that survived the Noto Peninsula earthquake disaster in Ishikawa Prefecture. There is a seven-year aged junmai sake, a four-year aged nihashojunmai sake, and possibly some honjozo mixed in. Just by listening to the lineup, you can tell that it has a sturdy structure.
I drank it cold at first. This was fine, but I think this kind of solid sake goes well with hot sake. It is like vinegar without the sourness. This is exactly what you would expect from an aged sake! It tastes like this.
It is a fun sake to drink with simmered dishes or oden. It has been a while since I have had this type of sake.

It is called "Yuho" because it is Hakui, Ishikawa, the town of UFOs. It has a delicious flavor and sweetness. If it is to be used as a food sake, it would go well with thick araitsuke or other dishes.

This is another sake from Noto, with a light cloudy color but almost no gassiness. It has a good mouthfeel, but the last taste is quite bitter and complex.

Next is my first drink, Yuho.
But when I saw the bottle (label), I saw it at Sake-no-wa! I thought. It seems the label was drawn by a local art school student. A local effort, 🎊Nice!
And it seems that the brewer himself brewed the sake!
When you drink it, you can taste the acidity.
A little dry?
It's refreshing, but it lingers on the tongue a bit (not in a weird way).
Ordered this one on the looks of it.
Surprisingly, it has a nice balance of classic flavor but also tenderness.
I even heard an episode about how it was designed by a local high school student, which made the drink even more flavorful.
