The second restaurant after two rounds of drinking at Kanazawa Oden.
I think I heard on the news that there was a string of cancellations in Kanazawa, but as expected, all the popular restaurants were fully booked!
We couldn't get into the small restaurant we went to last night, but we were told by the owner of the small restaurant that the mother of last night's snack bar also came to this restaurant!

I have tasted many Ishikawa sakes that are rather refreshing, but this one has a sweetness and leaves a sourness in the aftertaste!
Good sake with good food in Kanazawa is the best!
It is brewed in Hakui, Ishikawa Prefecture, a UFO town in the middle of the Noto Peninsula. Yuhonoshiro is a winter-only sake inspired by the snowy white winter of Noto.
This sake is characterized by its robust flavor and harmonious acidity. It is brewed with Association No. 9 yeast, which has a mild aroma and fermentation power that does not interfere with food.
Sake rice is Gohyakumangoku produced in Ishikawa Prefecture, rice polishing ratio is 62%, yeast is Association No. 9

Sourness and a hint of bitterness precede the taste 😆 The sake has the robust rice flavor of Gohyakumangoku and a mild aroma that does not interfere with the food 🤤.
We paired it with fatty tuna throat meat and lotus root plum kinpira.
Yuho Junmai Sake
The aroma is mild and not very pleasant.
The taste is first of all a bit of rice. It has a bold flavor typical of junmai sake, but it has a sharp, clean finish. It is easy to drink and light, so it goes well with just about anything.
It goes really well with oden. Maybe it goes well with soup stock.
