The synergistic effect of washing away the tartness of crab makes it possible to drink as much as you want and eat crab. It is quite crisp and clear, so it goes well with a full-bodied food.

I wonder what it will taste like next year. Wakabisu Sake Brewery is my hometown sake and my favorite sake. Without a doubt, it is the best sake in all of Japan.

本部長Junmai Ginjo Unfiltered Nama Sake. This bottle was recommended to me by a shopkeeper when I stopped by the brewery. As a lover of dry sake, I thought it might be a little too dry for my taste, but of course it was not. It is called "white grape" and has a characteristic grape flavor in the aftertaste. It is more like "grape sourness" than grape flavor. Anyway, rather than the sweetness of rice, you can feel the fruity flavor, the sweetness of eating grapes and a little bit of sourness, which is what you get when you eat grapes. The illustration on the package is also interesting and different from the usual sake.

本部長Junmai Daiginjo. Despite having the unique aroma of an old sake, the taste is clean and refreshing. There is no unpleasant sake smell at all, only a subtle aroma that lingers in the mouth. If you keep sipping and sipping, it will be gone before you know it. Old sake is expensive, but it is possible to drink it once in a while.

本部長I was told that it is officially classified as other miscellaneous sake because it is not licensed as sake. Slightly carbonated. The flavor of rice malt comes through with a thump rather than the flavor of rice. It is more like amazake with alcohol than sake. Of course, it is not as sweet as amazake, but if I had to choose one over the other, which would it be? This is the first time I have tasted it, and it is delicious.

本部長While visiting Dazaifu Tenmangu Shrine, I happened to be at a Fukuoka Prefecture sake event and tasted and purchased a bottle. It was quite refreshingly dry and quickly disappeared without leaving any aftertaste. 本部長Live yeast! The sizzling, slightly carbonated taste makes for a refreshing drink. The alcohol content is 15 degrees, not so different from that of regular sake, making it easy to drink. The taste is sweet, with the sweetness of rice coming through with gusto. It is recommended for those who like sweet sake, but Banshu Issen Shichiho Junmai Starch Tangle is only available at sake breweries in Shiso City, Hyogo Prefecture. If you ever get a chance to visit Shiso City in Hyogo Prefecture, please do!

I met it at the Nishinomiya Sake Gura Renaissance after a three-year absence, fell in love with it at first sight, and bought it immediately. It still has the mildness and sweetness of rice characteristic of nigori. Among nigori, there are rough and fine nigori, but this one is quite fine. I mistook it for drinking yogurt and drank it so fast that I had no memory of last night.
