ch_a_maSEASON II episode II Haginotsuru style This is a project in which seven breweries in Miyagi Prefecture collaborate once a year to brew sake. The leader brewery changes every year, and this year's production, the ninth year of the project, has a total of two bottles, with Yamawa Shuzo and Hagino Shuzo each serving as leader. This is Hagino Shuzo's version. The Yamawa Shuzo version was very tasty, but I usually drink Haginotsuru more than the Yamawa version. Therefore, we had higher expectations for this one. The taste was so good that it could not be better than this. Based on the usual Hagi no Tsuru, the flavor is extended in all directions, and yet the overall balance is perfect. It has a sweet and gorgeous aroma and mouthfeel. The body is full of freshness and richness. The outer frame has a hint of acidity and a pleasant umami aftertaste that spreads gently. The taste, which shifts from beginning to end with sweetness at its core, without becoming boring or clingy, scores 500 billion points out of a perfect score of 100. I could not help but smile at the taste, which was right in the middle of my tastes, not to mention the perfection of the sake itself. Can such a delicious liquid really exist? Is it not a dream? This is Yamawa Shuzo's version. Every year a very high level of sake is brewed, and since seven of our favorite breweries are gathered here, we already know that it is delicious, and the question is how delicious it is. The taste of this sake is so perfect that it easily surpasses such high expectations. It has a slightly refreshing aroma and a soft taste. While the mouthfeel is sharp, it is not what is called a sharp taste, but rather a flavor that is very important. It is followed by a refreshing bitterness and acidity reminiscent of citrus peel, and leaves a gentle aftertaste of umami with a hint of sweetness. While based on the usual Yamawa flavor, the taste has been extended in the direction of the gorgeous and rich umami that I like. It is a versatile sake that can be enjoyed with food or just with sake and water. I am deeply humbled by the efforts of the sake brewers in my hometown of Miyagi, and I am proud to be a member of my hometown, and I am happy to drink this sake again tonight.

ch_a_maSpecial Junmai Sake Matsubara-source This sake is made by the Kinai Shuzo brewery in Kurihara City, Miyagi Prefecture, and is brewed using hot spring water from Naruko Onsen, one of the three most famous hot springs in Oshu, also in Miyagi Prefecture. It has a mild sweetness and a slightly sour aftertaste. It is not flashy, but has a noble taste. The most notable feature of this sake is its smoothness. I am not sure if it is the effect of onsen water brewing, but it is different from ordinary water and has a soft and smooth texture that is enjoyable to the palate. This is a sake that you can savor at a leisurely pace, letting yourself feel as comfortable as if you were soaking in a hot spring. It is good.

ch_a_maJunmai Daiginjo Ginsei 40 Suminoe is a junmai daiginjo made with Gin-no-Iroha, a sake rice recently developed by Miyagi Prefecture. I won't bore you with the details, but Miyagi sake tastes very good when made with this rice. It is a beautiful harmony of the florality of Junmai Daiginjo and the full flavor of Gin-no-Iroha. It doesn't bother me. I wish they would sell it all year round. Maybe this feeling is love. The usual Hakurakusei direction is maintained, but it is slightly more gorgeous and has a fresh taste like a summer sake. ch_a_maTreasure Ship Nani no Oto Junmai Ginjo Gin no Iroha Yuri is another brand of the same brewery, located in Yuriage, Miyagi Prefecture, famous for its red clams. Gin-no-Iroha is a recently developed sake rice produced in Miyagi, and it is a good match for Miyagi sake breweries, regardless of the details. I think it is a good match for Miyagi sake breweries. This sake is ranked first (according to my research) in the list of Miyagi Prefecture's best hidden sake. The attack is a bit rough, but the aftertaste is clean, leaving only a slight bitterness and sweetness without leaving a bad taste, and the way it washes away your taste buds is reminiscent of a wave, just like its name. The brewery is located in Yuriage. It is a perfect match for seafood, especially shellfish and sea squirts.

ch_a_maJunmai Ginjo Mild Nigori Nama Sake When you are about to buy a bottle of sake, you may have some doubts about what to do if it is not the right one, but if it is from a well-known brewery, there is no problem and you can throw it in the basket without thinking about it. Printed directly on the bottle, rather than on the label, are some very cute marine creatures. It seems to be based on the image of an aquarium, but there are no whales in an aquarium, right? It's fine, though. The flavor and aroma spread softly and then disappear as if melting, reminding one of light snow, and its quiet appearance gives the impression of wabi-sabi. The calmness of the flavor is indescribably appealing, as if it were suited for a mealtime drink, but it is also enjoyable on its own in order to confront its fading aftertaste. ch_a_maYamakan This is the second collaboration with Katsuyama Shuzo, also a Miyagi brewery, following last year. The collaboration is a blend of the sake made at each brewery, rather than a separation of processes as in DATE SEVEN. Abekan, who brews a less flashy sake, but one that is honestly focused on the rice, and Katsuyama, who brews a fragrant, bright, and elegant sake. The sake produced by these two breweries, which have a certain symmetry, like a beauty and a beast, is still a masterpiece. The sake produced by the two breweries is a masterpiece. ch_a_maJunmai Omachi Hagi no Tsuru from the same brewery is light and refreshing, while Hiwada's famous sake is like a sake that demands serious effort from the drinker. It has a strange taste with no core. Not in a bad way, but a very soft taste that softly collapses like light snow and soaks up the umami on the tongue. The umami aftertaste is gradually stronger, and the flavor keeps shifting from beginning to end, making it very enjoyable. You may be a bit surprised to learn that this is a Miyagi sake and that it is made using the same yeast as the original, but we urge you to try it for yourself.

As the label says, it's pop, catchy, and tastes like a jolly good time. Sake! Water! Salt! It's not like "Sake! It tastes more like a carpaccio than sashimi. From the moment it enters the mouth to the moment it is swallowed down, the sweetness comes first, and the sweetness is the main aftertaste as well. However, it is supported by the gorgeousness of daiginjo, so it is not sticky but refreshingly sweet. ch_a_maSpecial Junmai A Urakasumi, a sake brewed in Shiogama, has a counterpart, "Un", but we were unable to obtain it. Too bad. First of all, note the cool label. It was created by Emi Ichinoseki, an ink painting artist based in Sendai. The motif of this ink painting is a ship named "Ryuhomaru," which appears in the Shiogama Minato Festival. As someone with a connection to Shiogama, this sake is a delight to drink. It is the usual Abe-kan, which is not glamorous, and even rugged. It has no habits, but if you ask me if it is easy to drink, I can't answer that it is. It is a full-bodied type of sake with umami as its main flavor, but its assertiveness is very modest. The sweetness and acidity are moderate. The aroma and sharpness are not that great either. And yet, it is so delicious that there is no other way to pair it with tuna but with Abe-kan. The characteristics of this sake are that it is very smooth. The impression one gets when drinking it is very similar to the texture of Morozoff-type steamed pudding. Why is that? You really don't know what I am talking about, but it has that texture of steamed pudding, or rather, of a very soft chawanmushi. If you think I'm lying, or even if you think I'm telling the truth, I urge you to give it a try.
